EGGS FOO YUNG : cup chopped mushrooms SAUCE | cup chopped onions 1 cup juice from bean sprouts | cup chopped celery 1 tbsp. cornstarch 1 cup bean sprouts ] tsp. sugar Salt and pepper 2 tbsps. soya sauce 6 eggs (well beaten) Saute in butter mushrooms, onion and celery. Cool and add to the well beaten eggs along with salt, pepper and bean sprouts. Melt some butter in frying pan over low heat; drop egg mixture onto the pan ¥2 cup at a time. Brown each portion on Cath sides; roll and fasten with a toothpick and place on warm platter. Serve with sauce. METHOD FOR SAUCE: Heat juice from bean sprouts till boiling. Add cornstarch, sugar that have been mixed with ¥% cup of water. Cook, stirring constantly till thickened. Add soya sauce. Claire Campbell SUKIYAKI 1 cup sliced fried mushrooms Fluffy rice 1¥2 lbs. steak (sirloin is nice ) 1 cup chopped fresh spinach cut in 142”x34” strips 1 can bamboo shoots or vegetables 1 cup sliced onions 2 tbsp. cooking oil 1 cup Y2” long celery pieces Y2 cup soya sauce Salt and pepper to taste 2 tbsp. sugar Heat oil in skillet. Add meat and brown. Add soya sauce and sugar and bring to boil. Cover meat with vegetables and place a lid over pan. Simmer for five minutes. Serve with a mixture of fluffy rice, | cup of sliced fried mushrooms and a cup of chopped fresh spinach. Shirley Stokes SWEDISH COFFEE RING ¥2 cup milk scalded Y% cup lukewarm water 2 tbsp. shortening 1 egg beaten Y4 cup sugar 2¥%2 cups flour | tsp. salt 1 pkg. yeast Dissolve yeast in water. Stir sugar, salt and shortening into hot milk until melted. Add beaten egg and yeast, then flour. Let rise about 15 minuts. Roll as for cinnamon rolls using white sugar, butter and cin- ramon. Join ends of rolls and pinch together. Put in large deep pie plate and cut almost through with scissors about every 112 inches. ays that they turn up similar to rolls. Let rise 30 minutes.
