Royal baking powder ¥% C. sugar almond slivers 1 C. butter FILLING: pinch salt 34 C. bread crumbs tossed and fried Y2 lemon peel grated in butter 5 T. milk 6-8 apples (peeled, cored and grated) 3 egg yolks ¥Y2 C. raisins juice half lemon ¥% C. sugar Preheat oven 350°. Mix first 5 ingredients on the board, mound and make a depression in the centre. Pour into the depression the milk, egg yolks, lemon juice and baking powder. Work this into flour mixture. Work out a dough and let rest in cool place. Roll out dough into 2 long rectangles, move each to a baking sheet with sides or cake pans. Mix the filling lightly, place the filling on the centre of each rectangle, cover with the dough from each side. Smear with beaten egg and toss chopped aimonds over the top. Pinch the dough at both ends to prevent leakage and also seal at the side when the fold over is complete. Bake at 350°F. until golden brown, % to 1 hour. Let cool an then cut and serve. KOURAMBIETHES (GREEK SHORTBREAD) Kay Sherley 1 Ib. butter, clarified 3%2-3% C. all-purpose flour, sifted 4T. icing sugar about 3 C. icing sugar for dusting 1 egg yolk cookies (dust heavily) 1 jigger whisky Preheat oven 325°. Clarify butter, refrigerate until the consistency is soft. Whip with electric beater until light and fluffy, about 10 minutes. Add sugar, beat until smooth (about 5 minutes), add egg yolk, and whisky. Beat well. Add sifted flour, a little at a time, beating constantly, until a soft dough is formed that can be handled easily. Work together slightly with hands. Pinch off 2 tablespoons of dough at a time shaping it into an oval or crescent. Place cookies 1 inch apart on an ungreased baking pan and bake at 325°F for 15 minutes, and 275°F for 30 minutes, or until they are lightly browned. Handling them carefully, sprinkle immediately with icing sugar. This should be done while they are still warm. They may be frozen, but sprinkle with extra sugar after thawing. Makes 4 dozen. You must use clarified butter. 95
