BASIC FRUIT COBBLER 2c. flour l egg, unbeaten 2 tsp. baking powder 3/4 c. milk 4% tsp. salt *4 tsp. vanilla 4 tbsp. shortening 3 c. fresh fruit lc. sugar 2/3 ¢c. sugar Sift together flour, salt and baking powder. Cream shortening, sugar and egg well together. Add the flour mixture alternately with the milk. Lastly add the vanilla and blend well. Have ready a well-greased casserole or pudding dish. Place any desired fruit in the bottom and sprinkle with sugar to taste. Pour the batter over this and bake at 350 degrees for 40 to 45 minutes. Serve with cream or a thin custard sauce. ( Use any type of fresh fruits). CHRISTMAS PUDDING 1 lb. currants 3 eggs 1 lb. raisins 1, lb. bread crumbs 4 1b. mixed peel Zc. Yicow * tsp. baking powder ¥% 1b. almonds lc. milk 3/4 1b. ground suet 1 tsp. mixed spices Salt to taste 1 1b. brown sugar Juice & rind of 1 lemon This makes 3-4 small puddings.
