ADVENTURES IN COOKING 183 DARK CHOCOLATE CAKE 114 cup cake flour 2 eggs, well beaten 1 tsp baking powder 14 cup thick sour milk 14, tsp salt 14 cup boiling water 4 tbsp butter 1 tsp soda 1 cup gran. sugar 2 squares unsweetened chocolate 1 tsp vanilla Sift together flour, baking powder and salt. Cream shortening, add sugar eradually, and cream together until light and fluffy. Add eggs. Beat mixture vigorously. Add flour and milk alternately, a small amount at a time. Melt chocolate, pour boiling water into melted chocolate and mix quickly. Add soda to chocolate, and stir until thick. Cool slightly before adding to cake batter. Mix thoroughly. Add vanilla. Bake in moderate oven (350°) half an hour or until done. Frost with butter icing. CHOCOLATE CAKE 14 cup shortening 1% tsp salt 1 cup sugar 114 tsps baking powder 2 eggs 4 cup sour milk 4 tbsps cocoa 14 cup apple or peach butter 14 cup boiling water 14 cup cut walnut meats 114 cups sifted pastry flour 1 tsp vanilla ae 14 tsp soda MBG Ly Cream shortening and sugar and beat in eggs, dissolve cocoa in hot water and add. Sift dry ingredients together and add alternately with milk and apple butter and vanilla, beat well. Add nuts. Pour into baking pan lined with waxed paper. Bake in moderate oven. CHOCOLATE ROLL 4 cup milk 4 tbsps flour 514 tbsps cocoa 1 tsp baking powder 34, Cup sugar 1% tsp salt 1 tsp vanilla powdered. sugar 4 eggs whipped cream Combine milk, cocoa, 6 tablespoons sugar and vanilla and mix to a smooth paste. Beat egg yolks until lemon colored, add 6 tablespoons sugar grad- ually and beat until mixture thickens slightly, add cocoa paste and beat well. Sift together flour, baking powder and salt and blend into batter well. Pour on a heavy greased wax paper into 10 x 15 cake pan. Bake 20-25 minutes in a moderate oven. ‘Turn out at once on a paper lightly sprinkled with powdered sugar, remove paper and roll. Cover with a damp cloth and cool. Unroll and spread with whipped cream, or any desired filling. Three tbsp. of cocoa and 4 tsp. butter equals | oz. of cooking chocolate.
