BANANA PANCAKES 14% cups flour % tsp. salt 1% cups milk © 1 tbsp. sugar 3% tsps. baking powder 1 egg, beaten 3 tbsps. melted shortening 1 cup bananas, finely diced or cooking oil (1 to 2 fully-ripe bananas) Sift flour with baking powder, salt and sugar. Combine egg, milk and shortening or oil and add to flour mixture. Stir. enough to dampen all the flour. Fold in bananas lightly. Bake on ungreased hot griddle, allowing “% cup batter for each pancake. When bubbles form on surface and edges are firm turn and brown on other side. —Mrs. Ruth Brace. BAKING POWDER BISCUITS 2 cups flour % cup shortening 1 tsp. salt 3 tsps. baking powder % cup milk Mix flour, salt and baking powder. Cut shortening into flour mix- ture until mixture looks like coarse corn meal. Add milk and mix until dough holds together. Knead lightly on floured board. Roll dough to % inch thickness and cut with cookie cutter. Bake in oven at 425° F. 12 to 15 minutes. —Mrs. Beatrice Pavan, Calgary. BEEP FRY CRISPS (QUICK) Place in a large bowl: 5 egg yolks % cup milk 1% cup cream (sweet or sour) Beat well and add: 3 cups flour % cup butter (soft) le tsp. Salt About 2 tbsps. lemon juice % tsp. baking soda for flavor 1% tsp. baking powder (Heat lard as for doughnuts.) Mix well and knead until smooth. Roll into % inch thickness. Cut in strips about 1% inches wide and about 4 inches long and make a slit lengthwise down centre of strip about % inch from each’ end. Just before dropping into fat twist one end inside out through slit. Fry as you would doughnuts. Put into a bag with some icing sugar and shake to cover pastry just before serving. BRAN MUFFINS : 4 tbsps. shortening 1 tsp. baking powder °% cup brown sugar 1 tsp. vanilla 1 egg 1 cup sour milk °%4 cup raisins 1% cups flour Small tsp. salt ~ 1 cup bran Mix well, put into greased muffin tins.
