Entire dinner can be prepared in about one hour. (This dish was prepared for us by U.of M. student Ralph James of Trinidad and was unanimously voted by the family as “the best food we've ever tasted”. I have since tried it with lamb and it is equally good.) - Lil Main. LIMA BEANS (Bette Donegani) 2 cans Mushrooms in butter and 2 tbsp. cteam 1 can Mushroom soup 2 cans drained Limas 6 slices crumbled cooked bacon Bread crumbs Parmesan cheese Put mushrooms, 2 tabls. cream, mushroom soup. drained limas (save juice) bacon in greased casserole. Add some lima juice if needed. Spread fine bread crumbs and cheese on top and bake in mod. oven till brown COATING FOR FRIED CHICKEN 1 cup flour 4 tsp. salt 2 tsp. poultry seasoning 1 cup cracker crumbs 2 tbsp. paprika 1/2 tsp. pepper Keep on hand in a sealer for emergency use. (Dip chicken in beaten egg and roll in above mixture). HAMBURGER VEGETABLE SOUP 2 tbsps. fat 1/4 tsp. pepper 1 carrot, diced 3 small onions, diced 5 cups water 1 cup diced potatoes 1 lb. hamburger 1 tsp. salt 1/2 tsp. dry mustard 1/2 cup diced turnip 11/2 cups canned tomatoes 1 can peas | Melt fat and brown meat, Cook about 15 minutes, stirring occasionally to prevent sticking. Place in soup kettle and add seasonings, also carrot, turnip, onion, tomatoes and water. Simmer 45 minutes. Then add potatoes and peas (including liquid), Simmer for about 30 minutes or until potatoes are ‘tender. - Doris Stevens
