SWEET SLICED CUCUMBERS — Evelyn Kardashinski 1 cup sugar 1 tbsp salt 1 cup vinegar 1 tbsp turmeric 2 cups water Boil this solution with some dill and pickling spices for about 10 minutes. Strain before adding to cucumbers. Put some dill, a little bit of garlic and 2 to 3 cloves in bottom of jar. Slice the cucumbers and fill the jars to the top. Pour the boiling brine over the cucumbers and seal the jars tight. Put the jars in hot water and let simmer until the cucumbers turn slightly yellow and the water comes just to a boiling point. Ready to eat in 3 weeks. Makes 3 quarts. CHILI FRUIT RELISH — M. King Single or Double Recipe. 12 or 24 large ripe tomatoes 1 or 2 green sweet peppers 3 or 6 peaches 1/2 or 1 head celery 3 or 6 pears 1/4 or 1/2 cup whole pickling spice 3 or 6 apples 1 or 2 tablespoons salt 3 or 6 onions 1-1/4 or 3 cups white sugar 1 or 2 red sweet peppers 2 or 4 cups cider vinegar Method: Scald and skin tomatoes, cut in pieces, place in a large preserving kettle. Scald, skin and dice peaches; peel, core and dice pears and apples. Peel and finely chop onions; seed and dice peppers. Add all fruits and vegetables to tomatoes, mix well and add spices (tied loosely in a bag). Add salt, sugar and vinegar. Let stand 2 hours before boiling, then simmer gently until thick, about 2 hours. Pour into jars. Very tasty with all kinds of meats. SWEET MEMORY PICKLES — Mpyrian Helms 14 dill size cucumbers, scrubbed & put in crock or glass jar (not metal) Add fresh boiling water to cover for 4 days. Slice and put back in jar. Pour over following syrup for 3 mornings. 1-1/2 pts. white vinegar (3 cups) 2 tbsps salt 1/2 pt. water (1 cup) 7 cups sugar 2 tbsps whole allspice green food colouring Drain syrup and heat to boiling each morning (3 times). 4th day, heat pickles too. Put in jars and seal. RHOBARB RELISH — Joey Thordarson 2 qts cut up rhubarb 1 qt vinegar 2 qts chopped onions Cook 20 minutes. Then add 4 lbs brown sugar, 2 tbsps salt, 2 tsps each of ginger, allspice, cinnamon, and cloves. Also 1 green pepper and 1 red pepper that have been put through chopper.
