Add flour, baking powder and salt which have been sifted together. Cut in stiffly beaten egg whites. Bake for 1 hour in moderate oven. Cover with butter cream icing and sprinkle with chopped nuts. MAPLE CREAM CAKE 14 cup shortening 34, cup milk 114 cups brown sugar 1 tsp maple flavouring 3 eggs l% tsp salt 21% cups flour 14 cup chopped walnuts 3 tsp baking powder Blend shortening with sugar and eggs. Sift sugar to remove lumps. Add sifted dry ingredients alternately with milk, add flavoring and walnuts. Bake in two 9” greased layer pans in moderate oven (375°), 20 minutes. SOUR CREAM ICING Cook 2 cups sugar with 1 cup of sour cream very slowly for about 20 min- utes until it forms a soft ball in cold water. Cool, add 2 tsp. maple flavor- ing, beat until creamy. Spread between layers and cover cake, decorate with half walnut meats. MARBLE CAKE 134 cups flour 2 eggs l% tsp salt 1% cup milk 2 tsps baking powder 1 square chocolate 14 cup butter 1 tsp vanilla 1 cup sugar 2 tbsps milk Sift dry ingredients. Cream butter and sugar, add beaten eggs and vanilla. Add dry ingredients with the milk, divide batter in two. Melt chocolate and mix with 2 tablespoons milk and add to one half, blend well. Drop batter by tablespoon into greased pan alternately white and chocolate. Bake in moderate oven 350°F. for 50 minutes. OLD FASHIONED SEED CAKE l% tsp salt 21% cups all purpose flour 84, cup butter 3 tsp baking powder 114 cups sugar 1% cup citron peel 4 eggs 14 cup orange or lemon peel (candied) 4 cup milk 1 tbsp caraway seeds 4 tsp each of vanilla and almond flavor Cream butter and sugar, add egg yolks and milk, then the fruit and seeds. Sift the flour and baking powder. Mix all. Then add the softly beaten ege whites. Bake in loaf pan | hour in moderate oven.
