18 APPLE JUICE RECIPES Fruit Juice Sauce: 1 cup sugar, 1 tablespoon cornstarch, % cup boiling water, 1 cup Allen’s Apple Juice, 2 tablespoons lemon juice. Mix cornstarch and sugar. Add boiling water and boil five minutes. Cool and add fruit juices. Surprise Cocktail: Fruit sherbet, 2 oranges, 1 banana, 2 slices of pineapple, 4% cup Allen’s Apple Juice. Cut fruits in small pieces and pour apple juice over all (the juice will prevent banana from discolouring). Have ready some frozen sherbet—any desired flavour may be used. When ready to serve, place a spoonful of sherbet in bottom of sherbet glass and fill glass with chilled fruit and apple juice. Fruit Nectar: Juice 4 lemons, juice 2 oranges, 1 cup Allen’s Apple Juice, 1 cup grapefruit juice, 1 cup pineapple juice, 1 cup simple syrup, 3 cups water, fresh mint leaves, 1 block of ice. Mix all fruit juices, add the simple syrup and chill. When ready to serve, place the ice block in a punch bowl, pour chilled nectar over the ice, float sugared mint leaves over the nectar. Serve in tall frosted glasses. Apple Betty: 3 cups stale cake or bread cubes, 3 cups apples, juice and rind of 1 lemon, 14 teaspoonful cinnamon, 3 tablespoons butter, 1 cup sugar, 14 cup Allen’s Apple Juice. Mix sliced apples, lemon juice and grated rind, cinnamon, apple juice and sugar. Butter a casserole, alternate a layer of fruit and a layer of crumbs, etc., until dish is three-quarters full. Dot with butter, cover and bake. Serve with lemon sauce, or cream. Mincemeat: 2 Ibs. beef, 1 lb. suet, 3 lbs. apples, 2 tablespoons grated orange rind, juice 2 oranges, juice 1 lemon, 1 pint Allen’s Apple Juice, 2 lbs. raisins, 1 Ib. currants, 1% lb. citron or watermelon preserves, 2 lbs. brown sugar, 1 table- spoon cinnamon, | teaspoon cloves, 2 teaspoons nutmeg. Grind meat, suet, apples and citron through food chopper, using a coarse knife. Add remaining ingredients and allow to stand 1 hour. Cook slowly 6 to 8 hours, stirring occasionally. Fill clean jars and seal. Baked Ham with Apple Juice: 12 to 15 lbs. ham, whole cloves, 1 cup brown sugar, 1 tablespoon mustard (sufficient vinegar to moisten) and 1 cup Allen’s Apple Juice. Wash and soak ham one hour in hot water. Place 2 or 3 plys of brown paper in baking pan, place ham skin side down and bake in fairly hot oven (allowing 25 to 30 minutes per pound). Before last hour of cooking, remove ham from oven, remove skin and excess fat. Score and stick whole cloves in ham. Rub with brown sugar, mustard and vinegar mixture. Pour cup of Allen’s Apple Juice over ham, return to oven and bake 1 hour.
