ADVENTURES IN COOKING 49 HAMBURGER SPAGHETTI CASSEROLE 2 lbs. hamburger 1 lb. spaghetti 2 tins tomato paste 1 large onion salt and pepper to taste Brown meat and onions in shortening. Cook spaghetti and add to meat. Add tomato paste and thin with water. Put in casserole and bake in oven for 4 hour. CORNED BEEF 4 pts. boiling water Y oz. saltpetre 14 lb. brown sugar bay leaves 34 Ib. salt Boil together and pour over piece of beef brisket after brine is cool. Let stand for two weeks. Rinse then boil meat in fresh water. BEEF UPSIDEDOWN PIE Crust: 114 cups flour 1 tsp celery salt 3 tsp baking powder 4 tsp white pepper 1 tsp salt 3 tbsp shortening ] tsp paprika 3%4 cup milk Meat: '% lb. hamburger or minced meat Y% cup diced onions 1 can tomato soup diluted with equal ¥ tsp salt amount water 2 tbsp shortening Brown meat in melted shortening, then simmer onions until soft. Add soup and simmer a short time. Put in a baking pan, roll out crust and put on top, cutting a slit in the centre. Bake about 20 mins., turn upside down on a large platter and serve. EASY BEEF STROGANOFF 1 onion, minced 4 teaspoon pepper 14 cup butter or shortening 14 lb. mushrooms, sliced 1 lb. ground round steak 1 can cream of chicken soup undiluted 2 tbsps flour (or mushroom soup) 4 tsp Ac’cent 1 cup sour cream 2 tsp salt a little minced parsley Cook the onion gently in the butter or shortening over medium heat. Add the meat and brown. Sprinkle flour and seasoning over the meat, stir, and add mushrooms. Cook 5 minutes. Add the soup and simmer uncovered for 10 minutes. Stir in the sour cream. Heat well, but do not boil. Sprinkle with parsley. Serve with buttered noodles and frenched green beans, “TO CLARIFY FAT AND REMOVE ODOURS” To every cup of fat add one cup of water and Y% tsp soda. Boil and allow the fat to harden.
