(Good with whipped cream on ‘top) LEMON CAKE PUDDING - Mrs. Joe Foster Temp Time Yield : 375 40 - 50 min. 6 servings 3/4 cup granulated sugar 2 eggs separated 4 tbls flour 2 tsp grated lemon rind 2 tbls melted butter 3/4 cup milk 2 tbls lemon juice Mix together dry ingredients, flour, sugar and salt. Beat egg yolks until light. Add lemon rind lemon juice melted butter and milk. Beat well, combine with the dry ingredients, beat until smooth. Beat egg whites until stiff then fold into batter carefully. Pour into buttered casserole. PRUNE PUDDING - Mrs. A. Davidson 1 cup chopped cooked l egg prunes 1/4 cup bread crumbs 1 tbls melted butter 1/4 cup sugar 1 tsp vanilla 1/2 cup chopped walnuts’ 1 tsp baking powder 1/2 cup milk 1/4 tsp salt Mix ingredients and pour into greased tin and steam 30 min. Serve with cream or sauce.
