Line a loaf pan with wax paper allowing paper to extend 2 or 3 inches above pan at each end. Pour mixture in and press down firmly; smooth top with back of spoon. Cover with wax paper or lids; store in cool place to ripen for at least 2 weeks. Sprinkle 2 tsp. of sherry over top of cake each week while aging. Makes 4 to 5 lb. Mrs. J.
