WHITE CAKE Anne Vickers, Regina, Sask. 1%, cup margarine, 1 cup sugar (scant), 2 eggs, well beaten, 14% cups sifted cake flour, 2 teaspoons baking powder, pinch salt, % cup milk, 1 tea- spoon vanilla. Cream butter and sugar until fluffy. Add well beaten eggs. Sift together sifted flour, baking powder and salt and add alternately with milk. Add van- illa. Bake 30 minutes at 350 deg. F. Ice with butter icing and sprinkle with crushed walnuts. A nice variation is to tint half the batter pink and swirl the white and pink batters in the cake tin. Ice with pink butter icing and cover with white cocoanut. Ww YW ONE EGG CAKE Eva Cawsey, Regina, Sask. ¥% cup butter, 1 cup sugar, % cup milk, 1 egg, unbeaten, % teaspoon van- illa, 14% cups sifted cake flour, 21% tea- spoons baking powder. Mix quickly after creaming butter and sugar slightly. Bake in moderate oven (350 deg. F.) for 15 minutes then increase heat to 375 deg. F. for 15 minutes. xO RAISIN NUT CAKE Ellenora Stobbe, Saskatoon, Sask. 22 cup butter, 1 cup brown or white sugar, 4% cup molasses, 2 eggs, 1 cup sour milk, 1 teaspoon soda, 2% cups flour, 2 teaspoons baking powder, 1% teaspoons cinnamon, % teaspoon cloves, % cup walnuts, 1% cups raisins. Cream butter and sugar. Add mo- lasses, beaten eggs and sour milk, in which the soda has been dissolved. Sift dry ingredients and add fruit and nuts. Add to first mixture. Bake in moderate oven. eee * § BLACK CHOCOLATE CAKE Ruth Newell, Saskatoon, Sask. 144 cup cocoa, % cup milk, 1 egg, % cup butter or Crisco, 1 cup brown sugar, % cup milk, 1% cups cake flour, 1% teaspoon salt, 1 teaspoon baking powder, 1 teaspoon vanilla, 1 teaspoon soda, % cup boiling water. Cook cocoa and milk until thick, stirring all the time. Add the beaten egg and cool mixture. Cream butter and sugar, then add chocolate mixture and blend well. Sift the flour, salt and baking powder together and add al- ternately with the milk and vanilla. Add soda and boiling water last. Bake at 350 deg. F. for 30 minutes. 19 WALNUT CAKE (ONE BOWL) Reenee Mitchinson, Saskatoon, Sask. 3 cups sifted cake flour, 2 teaspoons baking powder, 144 teaspoons salt, 1% cups sugar, 1 cup shortening, 4 medium eggs, unbeaten, % cup milk, 2 teaspoons vanilla, 1 cup very finely chopped wal- nuts. Start heating oven to 375 deg. F. Grease, then line with waxed paper, bottom of 9-inch tube pan. Sift together first 4 ingredients into large mixing bowl. Drop in shortening, 2 eggs, milk and vanilla. With electric mixer at medium speed beat 2 minutes, scraping bowl and beaters as necessary. Add 2 eggs and beat 2 minutes longer. Fold in nuts. Pour into pan. Bake 1 hour or until done. Cool in pan on wire rack 10 minutes. Remove from pan. OR ORANGE KISS-ME CAKE Joan Davy, Lindsay, Ont. 1 large orange, 1 cup raisins, 44 cup walnuts, 2 cups sifted flour, 1 teaspoon soda, 1 teaspoon salt, 1 cup sugar, % cup shortening, 1 cup milk, 2 unbeaten eges. Grind orange pulp and rind (reserve juice for topping) with raisins and wal- nuts. Sift together flour, soda, salt and sugar. Add shortening and % cup milk. Beat for two minutes. Add eggs and 4 cup milk and beat for two minutes more. Fold orange-raisin mixture into batter, pour into well-greased and lightly floured pan. Bake at 350 deg. F. for 40-50 minutes. Topping 14-14 cup orange juice, 4% cup sugar, 1 teaspoon cinnamon, 4 cup chopped walnuts. Drip orange juice over warm cake. Sprinkle with mixture of sugar, cinna- mon and walnuts. a NEIGHBORS’ CAKE Martha Grymaloski, Saskatoon, Sask. 2 cups brown sugar, 4 cup butter, % cup shortening, 1 cup rolled oats, 1 cup boiling water, 2 eggs, 1 cup flour, 14 teaspoon salt, 1 teaspoon cinnamon, 14 teaspoon cloves, 1 teaspoon soda, % cup chopped dates, % cup walnuts. Place the sugar, butter, shortening, and oats in a mixing bowl! and add the boiling water. Mix thoroughly and let stand for 20 minutes. Add the eggs beaten slightly. Sift the dry ingredients and add, then mix in the dates and nuts. Turn into a greased pan and sprinkle with % cup chopped walnuts. Bake in a 3506 deg. F. oven for 45 minutes.
