Le Oe eee BAKED LEMON PUDDING cup white sugar tbsp. flour tbsp. butter lemon (juice & rind) egg yolks (well beaten) cup milk egg whites Cream butter and sugar, add flour, juice and rind of lemon, then yolks beaten and mixed with the milk. Fold in well-beaten egg whites. Pour into greased pan. Bake in pan of hot water in moderate oven un- til set and slightly browned. - I. Rutherford. NEW ENGLAND BROWNIE PUDDING Mix 1/2 cup packed brown sugar and 2 tbsp. cocoa. Sprinkle this over the bottom of greased baking dish. Mix well the following ingredients and pour over above. 1/2 cup sifted flour 1 1/2 tsp. baking powder 1/3. cup. sugar 1/2 tsp. salt 1/4 cup milk 1 tbsp. melted butter 1/2 tsp. vanilla Pour 3/4 cup boiling water over top of all. SHOO-FLY PIE 1 1/4 cups sifted flour 1/2 tsp. nutmeg tspe cinnamon 3/8 cup butter unbaked pie shell 1/2 cup sugar 3/4 cup molasses 3/4. cup cold water 1/2 tsp. soda 66 Oven 450°. Sift together first 4 ingredients. Cut butter into dry mixture to crumb consistency. Mix molasses, water and soda. Pour this into shell. Sprinkle crumb mixture over liquid. APPLE DATE SQUARES 4 eups diced apples 1 cup granulated sugar 1/2 cup flour 2 tsp. baking powder 1/2 tsp. cinnamon l egg l tbsp. melted butter 1 tsp. vanilla 1/2 cup chopped dates 1/2 cup chopped walnuts Peel, core and dice apples. Com bine all ingredients in a bowl. Mix thoroughly, but do not beat. Turn into greased 8 x 8 x 2 pan. Bake in a hot oven (400°F) until apples are tender, about 45 mins. Cut in generous squares and serve hot or cold, with ox without top milk. - Joy McGougan. BANANA FREEZE eggs, separated bananas, mashed tbsp. sugar juice of 2 oranges Ov NM Mix egg yolks, mashed bananas, 3 tbsp. sugar and orange juice. Freeze firm. Fold in egg whites beaten stiff with remaining 3 tbsp. sugar. Return to freezer for 15 - 30 minutes. For special dessert, add 1/2 cup crushed pineapple to first mixture. - A. Holt.
