Brown Bread 4c. each white & whole- aon le fa wheat flour 4 T. molasses 4 Cc. water 3 T. shortening 3/4 c. brown sugar 1 pkg. yeast Mix yeast and 1 teaspoon white sugar in cup of warm water. Let stand for 10 to 15 minutes. Beat shor- tening, add sugar, molasses, salt. Beat in 3 cups water and the cupful of yeast mixture. Add flour and beat well. When risen, double in size, punch down and let rise again. Form into loaves and let rise again. Heat oven to 400°F. After about 10-15 minutes, reduce teat to 350°. Bake for about 1 hour ) 2. Oatmeal Bread 2 C. quick oats & Cc. molasses 2 T. yeast lt. salt 4 C. lukewarm water + C. margarine or shortening 1 t. sugar 4-6 C. flour 4c. boiling water an lukewarm Mix yeast,/water and sugar and let stand. Combine oats and boiling water. Stir and let cool. Add molasses, salt and margarine. When yeast has risen 15 minutes, mix with above mixture. Add some flour for soft consis- tency. Beat 5 minutes. Add more flour and knead on floured board until not too stickky to handle. Put in lightly greased bowl and cover with towel. Let stand in warm place till double in bulk. Divide into loaves, shape them and put into well greased loaf pans. [Let rise till double in bulk. Then bake in preheated oven at 350°F for one hour. Makes about 4 loaves.
