CHEESE PUDDING Butter 4 thick slices of bread and cut in cubes 1 cup grated Ontario medium cheese 12 cup milk 3 eggs, beaten 1 teaspoon salt Speck pepper 12 teaspoon prepared mustard In well buttered casserole, place alter- nate: layers of cubes and cheese. Pour mixture over this. Bake 45 to 60 min- utes at 325° F., placing casserole in pan of water. —NoRAH HILLMAN CHEESE RICE PUFF 2 tablespoons butter 2 tablespoons flour teaspoon salt (scant) 1g teaspoon paprika 14% cups milk 1 cup sliced or grated cheese 1 cup cooked rice 3 eggs Make a cream sauce of butter, flour, milk and seasoning. Add the cheese. When cheese is melted, add rice and egg yolks well beaten. Mix well. Fold in stiffly beaten egg whites. Pour into buttered baking dish, placed in pan of hot water. Bake 34 to 1 hour at 350° F. Serve garnished with hard boiled egg slices and parsley. —Eva Morrison CHOW MEIN 2 cups diced cooked meat (chicken or pork) 1 cup chopped celery 1, cup chopped onion 14 cup sliced green pepper 3 cups broth Boil together for 15 minutes, then add 1 cup mushrooms and | cup bean sprouts. Thicken with 1 tablespoon corn starch and add 1 tablespoon soya sauce or Wor- cestershire sauce. Add 1 teaspoon salt and a little pepper. Cut bacon up fine and fry until brown. Put minced meat in with onions and cook until meat is white. Add tomato catsup and kidney beans. Mix mustard, sugar, chili powder, pepper and salt. Make into a paste with water. Add to mixture and cook slowly all day. Add mushrooms 1 hour before serving. Serve with rye, brown or white bread. —MILDRED BROWN CHILI CON CARNE 1 green pepper, chopped 1 onion chopped 3 tablespoons butter 1 Ib. hamburger 1 cup tomato soup 1 can red kidney beans Chili powder 1 teaspoon Worcerstershire sauce Fry pepper and onion in butter.
