COOK BOOK | 37 Mocha Cakes Y% cup butter, 1 c. sugar, 1% cups flour, 3 egg yolks, 1 tsp. b. powder, grated rind of 1 lemon and 1 tsp. juice, 1 tbsp. warm water. Have egg whites well eaten and add alternately with flour, add warm water last. Bake in 10” square pan. Cut in inch squares when cold and ice with the following: Icing— lc. icing sugar, % cup butter, 3 tbsps. cream, 1 tsp. vanilla. Put all in bowl and set in hot water till melted. Dip cake squares in and then roll in cocoanut, chopped roasted nuts or graham wafer crumbs. —M. Coleman. Swedish Cakes 4 cup butter, 4 cup brown sugar, 1 egg yolk slightly beaten, 1 cup flour. Cream sugar and butter till light and fluffy, add egg yolk, mix thoroughly and add flour. Roll into small balls and dip into slightly beaten egg whites. Roll in finely chopped nuts. Put in pan and bake 5 minutes. Remove from oven and press in centre, bake 10 or 15 minutes more. While still warm fill centre with jelly —A, Jarnagin. Ginger Cookies 14 c. butter, % cup molasses. Boil together. Cool. Add 1 egg, 2 cups flour, 2 tsps. ginger, 1 tsp. soda, 1 sm. c. sugar sifted together. Add boiled mixture. Roll in small balls and press. Bake in moderate oven. —Mrs. W. Campbell. Scotch Shortbread 14 lb. butter, % cup packed brown sugar, 2 cups flour. Method: Cream butter, add sugar and mix with hands, add flour, knead on board 20 mins. Bake in slow oven until delicately browned. —Mrs. B. Ehman, Jr. Jam-Nut Squares 34 c. flour, tbsp. sugar, 5 tbsp. butter, 1 tbsp. milk. Sift flour with sugar, rub in butter, add milk to make a stiff dough. Press into a floured shallow pan and bake in moderate oven for 15 mins. Remove from oven and spread with jam, then cover with topping and return to oven for about 30 mins. Topping: 1 egg, beaten light, add % c. brown sugar and continue to beat. Add 1 tbsp. flour, %4 tsp. b. powder, pinch salt, 34 c. chopped nuts, vanilla. —Betty Anderson. Peanut Oatmeal Cookies lc. butter, 1c. br. sugar, 1 egg, 1% c. rolled oats, % c. corn flakes, 1% c. flour, 4 tsp. b. powder, 4 tsp. soda, 1 c. salted peanuts chopped coarse, milk if necessary.
