SOUR CREAM SALAD DRESSING - Cooked 1 cup milk 3 tbsps. flour % cup vinegar 2 tsps. prepared mustard 2 eggs, beaten 1 tsp. salt 5 tbsps. sugar 1 cup sour cream Heat the vinegar in the top of a double boiler. Combine the dry ingredients and add to the well beaten eggs and milk, Blend and add to the heated vinegar, stirring constantly until the mixture thickens. Cool and combine with equal parts of sour cream as it is used. SOUR CREAM POTATO SALAD 4 cups cooked diced potatoes 3 hard-cooked eggs % cup diced cucumber 1% cups sour cream 1 tsp. minced onion % cup mayonnaise or % tsp. celery seed salad dressing 1% tsp. salt % cup vinegar % tsp. pepper 1 tsp. prepared mustard Combine potatoes, cucumber, onion, celery seed, salt and pepper. Toss together lightly. Separate yolks from whites of epgs. Dice whites and add to potato mixture. Mash yolks and combine with sour cream, mayonnaise, vinegar and mustard. Add to potatoes and toss together lightly. Allow to stand 15 minutes before serving. Garnish with crisp salad greens. Serves eight. POTATO SALAD WITH COTTAGE CHEESE, AND SOUR CREAM 1 cup cottage cheese 1/8 cup mayonnaise 3 cups diced, cooked potatoes 1 tsp. chopped chives % cup sour cream 3 slices of bacon, diced fried Combine sour cream and cheese. Add mayonnaise to potatoes. Then add cheese mixture. Fold in chives and bacon. Serve on lettuce or other greens. Serve 4-5.
