PORCUPINE MEAT BALLS 1% pounds ground round or chuck beef 4 cup raw rice 1 teaspoon salt Few grains pepper 4 cup finely diced onion 1 peeled garlic clove, minced 1 can tomato soup 1 cup water Combine ground meat, rice, seasonings, onion and garlic. Shape into. balls. Put tomato soup and water into bottom of the cooker. Place the meat on the rack. Cook at 15 pounds pressure for 15 minutes. Serves SMOTHERED MEAT BALLS Y% cup milk 1 egg 4 cup fine, dry bread crumbs 1%4 teaspoons salt 14 teaspoon pepper lg teaspoon nutmeg 4 teaspoon ginger Y% teaspoon mace 3% pound ground beef 2 tablespoons fat 2 cups.sliced onion 4 medium potatoes, cut in quarters Mix first 9 ingredients together and form into balls. Brown in fat in bottom of cooker. Add onions and brown. Add potatoes. Cook rs 15 pounds pressure for 10 minutes. Serves our. GROUND BEEF PILAF 1 cup rice, uncooked 1 pound ground beef 2 cups tomatoes 1 onion, diced 14 cup cream Salt and pepper 1 cup water Brown meat and onion together in a little fat in the bottom of pan. Season with salt and pepper. Add tomatoes, rice, cream and 1 cup water. Cook at 15 pounds pressure for 15 minutes. BRAISED SHORTRIBS 3 pounds beef ribs Salt and pepper 2 tablespoons fat Y% cup water 1 onion, sliced % cup celery, diced 1 cup tomatoes 1 carrot, chopped 1 tablespoon chopped parsley YZ teaspoon peppercorns Sear ribs in fat in bottom of cooker. Add all ingredients. Cook at 15 pounds pressure for 45 minutes. BARBECUED SHORT RIBS ~3 to 4 pounds short ribs 1 teaspoon salt 'Y% teaspoon pepper 1 teaspoon mustard 1 teaspoon marjoram 3 tablespoons fat: 1 small onion, minced 1 tablespoon honey 1 cup tomato paste Y% cup water Rub meat with seasonings. Brown ribs in hot fat, browning onion while meat is on last side. Add honey, tomato paste and water. Cover, seal and cook at 15 pounds pressure for 45 minutes. Serves 6. CARIBOO STYLE SHORT RIBS OF BEEF 3 pounds short ribs 2 teaspoons paprika 2 teaspoons salt 1 large onion ™%Z cup ketchup 4 cup vinegar 2 tablespoons water 2 tablespoons chili powder 3 tablespoons bacon or pork fat 1 can kidney beans or*1 pound kidney beans, soaked and cooked 30 min- utes in the pressure cooker.
