WAFFLES 1 1/2 cuns flour 3 tsp. baking powder 1/2 tsp. salt 2 tsp. sugar 1 cup milk (about) 2 egg yolks, well beaten 2 egg whites, stiffly beaten 3 - 4 tbsp. melted butter Mix and sift dry ingredients. Add milk gradually, egg yolks, butter and lastly fold in stiffly beaten egg whites. Bake on hot waffle iron. Makes 8 to 12 waffles. SOUR MILK WAFFLES: Use rich sour milk or buttermilk and add 1/4 tsp. soda. - Sylvia Burnip. CHEESE HARVESTERS 1 1/2 oz. butter 3 tbsp. flour 1/2. si pint milk 2 eges 4 oz. grated cheese 8 oz. processed cheese 1 oz. flour & 2 oz. bread crumbs Fat for frying Melt butter, add flour, stir in milk until the mixture is smooth and thick. Remove from heat, add un beaten egg yolks, fold in grated cheese, return to heat until cheese is melted. Remove from heat and add processed cheese cut in cubes, sea~ son with salt and pepper, pour into Shallow baking tin to cool. When required, turn out solid mixture on to floured board and cut into rounds. Turn in lightly beaten egg whites, coat with bread crumbs and fry in very hot fat with bacon. - E. Wiseman. 84 PANCAKES & WAFFLES POTATO PANCAKES Peel & wash potatoes. Grate finely. To 4 cups of grated potato, add 4 eggs, 1 cup flour or enough to make a medium batter, salt to taste and mix well. Bake in heavy pan with sufficient lard or shortening to keep from sticking. Make into patties and brown in pan heated to 350°. Turn and brown other side. Serve with syrup or sausage. - K. Sjogren. SCOTCH PANCAKES 1 egg 1/4 cup butter 2/3 cup milk 1/2 cup icing sugar 2 tsp. baking powder 1 cup sifted flour eee te ne teen Cream butter and sugar, beat egg well and add.
