FOREIGN DISHES 83 CORNISH PASTIE (Recipe makes one pastie) Use pie dough for crust. For each pastie (two pasties to a pie tin) make a round of dough 6 to 8 inches. On lower half of round place this filling: 1 cup sliced raw potatoes, sprinkle with a little salt and pepper; Y2 cup chopped onion, 1 cup diced round steak (uncooked), sprinkle over it a little suet or 1 teaspoon butter; salt and pepper it again. Fold over dough and press edges together, then bake at 375 degrees until crust is nice and brown (about 40 minutes). Serve with cole slaw with apples or pineapple added. PIEROGI (Polish Dish) Noodle dough: 1 heaping tablespoon butter, 3 cups flour added to 1 teaspoon salt 1 cup warm water Mix and knead well. Spread a little butter over top of dough to keep it soft, then let it stand under an inverted bowl for 3 hours. Roll dough into the shape of a log about 12 or 14 inches lang, then slice into 12-inch slices. Now roll out each slice into thin rounds and fill with filling mixture. Gather dough up into a ball and seal tightly, drop into boiling salted water for 8 to 10 minutes. Drain and serve with melted butter or sour cream. Filling (3 variations) (1) 1 Ib. cottage cheese 1 tablespoon sweet or sour | 1 egg cream (or melted butter) | Salt to taste (2) | 1 Ib. cottage cheese 1 tablespoon melted butter | 1 tablespoon minced onion 1 can sauerkraut, drained | (3) | Y |b. dry cottage cheese 1 cup dry mashed potatoes 1 small onion, sauted in (mashed without milk) 1 tablespoon butter Mix filling ingredients well and place two teaspoons of mixture in round of noodle dough and proceed as directed above. GERMAN POTATO PANCAKES 3 large potatoes grated 1 tablespoon flour 1 teaspoon salt 1 egg, beaten Pour off some of the water from the grated potatoes, add the rest of the _ ingredients. Fry in fat on hot pan. Serves two people. SWEDISH RICE PUDDING 1 cup rice (3 tablespoons sugar may 6 cups milk be added) 1 teaspoon salt Use double boiler and after the water begins to boil, turn flame down to simmer _ and cook for about 3 hours. If double boiler is not used, loosen rice and stir so it does _ not stick to bottom of the kettle. Start with 2 cups of milk and keep adding milk _ until all of the six cups are used up. Topping i _ Mix ] teaspoon cinnamon to 4 tablespoons sugar. Put a pat of butter on each _ serving and sprinkle with the cinnamon mixture.
