Meat and Chicken OVEN TEMPERATURES FOR MEAT AND CHICKEN Roast all meats except pork at 325°. Pork at 350° — must be well done. Poultry at 325°. Fish at 400° — Fillets 20 minutes Steaks 30 minutes Whole 15 minutes per pound. GLORIOUS STEW 4 - 5 lbs. chuck steak cut into pieces and well trimmed of all fat. Place in heavy pot or casserole. Heat and pour 2 tins undiluted onion soup over meat. Season with lemon pepper, perhaps some dill or rosemary. Add a bit of wine, vermouth or sherry if you have it. Cover casserole with foil or lid and simmer in 250° oven for 5 - 6 hours. (Simmer DO NOT BOIL). Add any and as many vegetables as you wish and thicken gravy with a little flour and liquid from the stew. Correct for seasonings. Jean Allan — “‘Gannet IT” DUTCH DINNER Fry 6 slices bacon until crisp. Remove from pan and drain. Slice and fry in bacon fat until brown, 4 cold boiled potatoes (or 1 large can white potatoes). Lower heat and break 4 eggs over potatoes. Mix together, add crumbled bacon and cook until eggs are set. Serves 4. HAMBURGER STEW In a large frypan brown: Sprinkle in and then let bubble up well: 2 Tbs. fat ¥% cup flour 1% - 2 lbs. ground beef 2 tsp. salt ¥, tsp. pepper ¥% tsp. bouquet garni or marjoram Remove from heat and stir in: 1 can consomme or beef broth 1 soup can milk Cut all vegetables on the diagonal. Add carrots, potatoes and onion wedges, cover and simmer 15 minutes. Add celery, tomato wedges, cover and cook 10 minutes longer or until the vegetables are to your taste. NOTE: — Weiners or Prem may be used instead of beef. If lots of vegetables available you can add a little extra milk, or if adding canned mushrooms, use some of the juice. Broccoli, cauliflower and green beans would be added with the carrots. Green pepper, zucchini and mushrooms would be added with celery. Can be done in oven with biscuits on top.
