Chinese sauce 1 cup bamboo shoots 2 tsp. salt 1 cup celery 1 cup stock or water 1. lb. raw. pork or 2 tbsp. Cornstarch in chicken 2 tsp. water. 1 egg, beaten Peel Chinese chestnuts, slice, then cut. into threads; cut bamboo shoots and celery 3 inches long, then into slices lengthwise, and then into long threads. . Cut pork or.chicken into strips. 1% inches long; fry egg in oiled pan, cut in 14%4-inch strips; cut onion. into threads. The noodles must be freshly made and well Gzvied. Sprinkle about 2 tbsp. of oil over the noodles, place on rack of steamer, let steam 15 minutés, lifting carefully with fork to separate well, Spread on board, let cool, then fry until crisp and golden brown, in deep hot oil. Drain well and place on hot platter. Have ready the following: Heat in frying pan, add salt, 1-3 cup oil or pork drippings, then the pork; let fry gently without browning, about 15 minutes, Stixring occasionally. Then add chest- nuts, bamboo shoots, celery and 1 tbsp. Chinese sauce. Cover; let steam about 15 mins., stirring occasionally. Add 1. tbsp. Chinese sauce to softened cornstarch; mix with about 144 cup stock or water if necessary.. Pour dver the vegetables. Mix well, add more water if necessary. Stir and let cook 2 mins. and spread over the hot fried noodles and decorate the top with onion strips and egg threads. Chicken may be used in place of pork. BEEF HASH Thinly chop 2 small onions. Melt 1 tbsp. but- ter in a very small saucepan over a slow fire. Add onion and cook 5 mins. and add to the following ingredients. Cut into very small dice 2 cups full of boiled left-over superfluous fat, skin and _ gristle re- moved, also nearly as much cold potatoes boiled or baked the cay before. Season with a tsp. of salt and 1-3 tsp pepper and powdered sweet thyme. If thyme is ‘not available, use either sage or nutmeg. Mix all together. Melt in an omelet pan set over a moderate heat 3 tbsp. dripping. When hot arrange in the hash mixture. Cook until browned underneath. Then turn over. When again browned underneath fold, shaping it aS an omelet. Invert like omelet on a hot EVID’ dish and garnish with parsley. CURRIED TRIPE First boil the tripe in water for half an hour. While it is cooking; peel and chop two or three large onions and fry them lightly in butter; when browned, push them to one side and stir in a dessertspoon of curry powder and a bear ib i> of flour into the remaining. fat. Now gradually add one pint of stock and stir until it boils, then add the tripe (which should be cut into small pieces), season with salt and a squeeze of lemon juice, and stew gently for one and a half hours.. Serve very hot with a border of boiled rice. : BAKED BEAN WITH FRUIT Add to baked beans or vetarian beans ready to bake the grated pulp of a sour apple or the juice of an orange. HONEY BEAN POT 1% tsp. pepper 4% cup honey 4 sliced apples 1 pt. pea beans 2 slices onion % cup vegetable oil 2 tsp. salt ; Soak the beans overnight, drain and rinse, add 4% tsp. scda and boil in water to cover until the skins are loosened. Drain. Put the beans in a casserole with the onions, oil, seasonings and honey... Barely cover with boiling water and cook until soft about 2% hours, temp. 300F. Place the apples over the top and cook uncovered until brown and tender. BACON AND PRUNE SAVOURY 6 prunes 6 small slices of 6 almonds bread 6 thin Slices of Salt and pepper. bacon Wash the prunes and soak overnight, then stew gently until tender, using no sugar. When cooked drain 6ff the water, split each prune, take out stone, season inside with salt and pepper, then insert almond and close up again. Cut the rind from the bacon and roll up with a™“prune in- side. Fut in baking dish and cook gently in the oven. Cut bread same size and fry in some bacon fat. Serve a roll on each piece of fried bread. Add a quarter cup of finely chopped suet for each cup of your dumpling mixture and boil as you do ordinary dumplings. You’ll have a dumpling with a bit more flavor than ordinarily. And, speaking of dumplings, add an egg for richness now and then, if eggs are plentiful. If the baby won’t eat cereal and is big enough | to have pasteurized butter, try adding a bit of butter to the cereal. He may eat the cereal] for the sake of getting the butter..
