SAVORY BEANS > 1 lb. green beans 2 egg yolks (fresh or frozen) | +o. cream (sweet rs Cc. water or sour) : q tsp. salt 2 tsp. soy sauce “i 5 tsp. sugar i medium onion ~ dash of cayenne 1 lemon (juice) 1/8 tsp. Accent fresh parsley Drop beans into boiling mixture of first five ingredients plus soy sauce and onion. Cover tightly.and cook slowly 10-15 mins. Little liquid is left..Mix beaten egg yolks,cream,. lemon juice and chopped parsley. Heat slowly (do not boil) until thickened slightly. Stir constantly. Pour over beans. Serve piping hot. 49. COMPANY CABBAGE Parboil cabbage in salted water with lia on. Drain well. Add tomato juice to barely cover. Simmer with lid off. Stir occasionally. Saute 4 slices chopped bacon. Blend in about 2 tbsp. flour. Add liquid from cabbage. Thicken. Pour back over cabbage. ©
