Repeat process then add |4 c. boiling water and 14 c. sugar. Sift dry ingredients, work in butter with fingertips. Beat egg and com- bine with milk. Add flour mixture, then add orange peel. Bake in moderate oven | hour. Raisin Nut Bread 34 ¢. sugar 1 T. shortening 14% t. salt 14% ¢« sour milk 1 c. seedless raisins 1 egg 2 c. flour 14% ¢. bran 4 ¢. chopped walnuts 1 t. b-powder 114 t. soda Mix well. Fut in 2 small bread pans and allow to rise for 15 minutes in warm place. Bake 45 min. to | hour in moderate oven. Brown Bread 1 ¢. molasses 1 t. salt 1 t. soda 2 eggs 2 c. sour milk 1 c. sugar 1% graham flour 1% ec. white flour Mix molasses, beaten eggs, and sour milk in which soda has been dissolved. Sift flour with salt and sugar and add gradually to liquid. Mix all well and bake in greased loaf pan. This is very nice spread with butter for lunch. Date Loaf 1 Ib. dates 1 t. soda 1 ec. w-sugar 1 ec. boiling water 14, c. butter Pinch of salt 3%, ¢. graham flour White flour Pour boiling water over dates and soda. Add butter and sugar and salt. Add graham flour to liquid and enough white flour to make a stiff batter. Turn into greased loaf pan and bake. Health Bread 1 ce. wholewheat flour 1 t. salt 1 ¢c. sour milk or 1 c. molasses 2 c. bran buttermilk 4 c¢, raisins 1, c. nutmeat 1 t. soda Y, ce. white flour Sift white flour over raisins and nuts and combine with whole wheat flour and bran. Add salt and mix thoroughly. Add molas- ses. Dissolve soda in milk and add to mixture. Stir until smooth and turn into an oiled and floured bread pan. Bake | hour in mode- rately slow oven. 83
