CODFISH WITH RICE & VEGETABLES 4 tablespoons Oil or Fat 2 cups Potatoes diced or 1 cup chopped Onions grated 2 cups grated Carrots 2% cups diced raw Codfish, % cup Rice freshened 2 cups Tomatoes 1 cup chopped Celery 2 cups boiling Water Salt and Pepper, but- tered bread Crumbs Fry onion in fat, and put in baking dish. Add one layer of carrots, then codfish, rice, celery and potatoes, all uncooked. Season well. Add boiling water, tomatoes and sprinkle with buttered bread crumbs. Cook in mod- erate oven 11% hours. CODFISH SCALLOP WITH VEGETABLES 2 cups cooked Vegetables (carrots, potatoes, onions, etc.) 2 tablespoons Fat or Butter 3 tablespoons Fiour 1 cup Milk ; | 1 cup Vegetable Water (or Milk, if none available) 1 teaspoon Salt % teaspoon Pepper 1 cup cooked Flaked Codfish Sifted Bread Crumbs Make a white sauce by melting butter, blending in flour, adding milk and vegetable water, and cooking until smooth and thick. . Place the cooked, diced vegetables in a greased casserole, add the flaked codfish, season, cover with the white sauce, sprinkle with bread crumbs and dot with butter. Bake in a moderate oven until brown and hot. Serves 6. 20
