SAUCES WHITE SAUCE THIN MEDIUM THICK Rapeseed oil ------ 1 tbsp. <------ 2-3 tbsp. ------ 4 tbsp. Flour 1 tbsp. ------ 2-3 tbsp. ------ 4 tbsp. Milk 1 cup 1 cup 1 cup Salt 1/4 tsp. ----- 1/4 tsp. 1/4 tsp. Pepper 1/8 tsp. ----- 1/8 tsp. 1/8 tsp. Combine oil and flour. Stir continually over direct heat until mixture has bubbled for about 1 minute. Remove from heat. Stir in milk and bring to boil. Boil one minute stirring constantly. Add seasoning. Serve with vegetables, meat or fish. EGG SAUCE Add sliced or chopped hard cooked egg to medium white sauce. Serve with fish. CHEESE SAUCE Add 1/4 tsp. dry mustard and 1/2 cup grated Canadian Cheddar Cheese to medium white sauce. Stir until blended. Serve with cooked cauliflower or over toast. MUSHROOM SAUCE Make medium white sauce except saute 1 cup sliced mushrooms and 1 tsp. grated onion in oil for 5 minutes before adding flour.
