Pumpkin Loaf 1% cups flour 1 t. baking soda YW, t. salt 1 t. baking powder 1 t. cinnamon 1 cup sugar Sift together in mixing bowl: In a hole in the centre add: 3, cup crisco oil 1 t. vanilla 2 eggs Mix at slow speed. Add 1 cup pumpkin. Makes 1 9x5 loaf pan. Maybe doubled. Bake in a geased pan at 350 for 50 to 60 mins. Mrs. E. Thomlinson McCreary, Man. Maple Walnut Chiffon Cake 2 cups pastry flour or 174 cups all purpose flour 3 t. baking powder 1 t. salt 12 cup white sugar 5 eggs 1 t. vanilla 3% cup luke warm water Y2 t. maple flavoring Y2 cup finely chopped walnuts Y2 cup cooking oil (salad) Y2 t. cream of tarter Measure flour, baking powder, salt and sugar into sifter. Sift into mixing bowl. Make well in centre, add without comibining, cooking oil, egg yolks, luke warm water, vanilla and maple flavoring. Using wooden spoon, stir and combine, then beat until smooth. Stir in finely chopped walnuts. Put egg whites in large bowl. Sprinkle with cream tarter. Beat until very stiff. Add batter to beaten egg whites about 4 at a time, folding gently to combine after each addition. Turn into a 10-inch ungreased tube pan. Cut into batter to cut air bubbles. Bake at 325 until cooked and golden, approx. 1% hrs. Hang upside down until cool. Loosen and shake from pan. Mrs. Beryl Robertson Ochre River, Man.
