LUNCHEON DISHES 95 HAM LOAF 1 can spam or prem Y2 |b. cheese 18 soda crackers (not salted) ¥Y2 onion Put above through food chopper, then add 2 eggs and 1 pint milk. Mix all together, form into loaf. Bake 1 hour in medium oven. DEVILLED SHRIMP OR CRAB 2 cups white sauce 2 tablespoons chopped green 1% cups shrimp or crab pepper 1 teaspoon minced onion 1 teaspoon lemon juice 1 tablespoon soy sauce VY cup buttered crumbs Salt and paprika Serve in toasted crustades. To make crustades cut bread 2 inches wide, 3 inches long and cut out the centre to leave a case. Brush all over with melted butter and toast lightly in oven or broiler. Fill crustades with fish mixture. Sprinkle with crumbs and paprika. Put in oven to reheat for 10 to 15 minutes. CHILI CON CIASSA 1 onion chopped fine 2 Ibs. Velveeta cheese 2 cloves garlic (squeezed) 2 cans green chili (sweet) 2 tablespoons butter peppers 1 large can tomatoes Salt and pepper 1 teaspoon oregano Brown onion and garlic in butter. Then add tomatoes, salt, pepper and oregano. Mix well and cook 15 minutes. Add cheese, green chili peppers and simmer 1 hour. Serve with crackers. SHRIMP A LA KING (VERY QUICK) 1 can large cleaned shrimp 1 small onion 2 tablespoons butter 1 pkg. cultured sour cream 2 tablespoons flour (about 1% cups) Cook onion (cut in small pieces) in butter until tender, add shrimps and flour and mix well. Add sour cream and simmer 5 minutes. 1 small can mushrooms can be added. Serve over toast or rice, add pepper. SHRIMP ROLLS Grind 1 Ib. cheddar cheese 2 medium size onions 2 cans (5 oz. size) shrimp Catsup to moisten 1 jar (4 oz.) stuffed olives Split hotdog buns, take out a bit of centre (optional), stuff with mixture, wrap in foil or wax paper and twist ends. Bake in covered roaster 2 hours at 225 degrees. Good after games, parties, etc., with frozen fruit salad or whatever. About 1% dozen. SPANISH CHICKEN SAUTE 2 to 3 Ib. broiler cut in pieces 12 small peeled onions Y% cup salad oil 1 stalk celery, cut in pieces Paprika Y teaspoon oregano, salt and 1 clove garlic, finely chopped pepper 1 green pepper, chopped 2 tomatoes sliced in small pieces Sprinkle chicken with paprika. Heat salad oil in heavy pan and brown chicken. Add garlic. Remove chicken from pan and add green pepper, onion, celery and Oregano, and heat over low heat for 10 minutes.
