18 FRIENDLY CIRCLE—1949 Sunshine Cake lc. sugar, 7 egg whites, 5 egg yolks, % tsp. salt, 1 tsp. vanilla, 1 tsp. cream of tartar, 1c. flour (ordinary) or 1% c. Swansdown. Sift flour and sugar separately five times and then measure. Beat egg whites fairly stiff, add salt and beat again, add cream of tartar and beat until very stiff, gradually add sugar, beating stiff as possible. Beat egg yolks till a lemon color, add vanilla, then fold into the white mixture and carefully fold in the flour. Put in a floured tube pan and bake in a slow oven 50-60 minutes. Let remain in inverted pan for an hour. —Mrs. B. Howarth. Pink Valentine Frosting 2 tablespoons Crisco, 2 tablespoons butter, 1 teaspoon vanilla, 14 teaspoon almond extract, % teaspoon salt, 4 cups sifted confectioners’ sugar, 9 tablespoons scalded cream (about), red coloring. Combine Crisco, butter, vanilla, almond and salt and blend. Beat in %4 cup sugar. Add hot cream, al- ternately with remaining sugar, beating well after each ad- dition. Add only enough cream to make a nice spreading con- sistency. Add a few drops of red coloring to tint frosting a delicate pink before spreading on cake. —Mrs. P. Crawford. Jelly Roll Yolks of 3 eggs beaten with % cup sugar, 1 tablespoon water, add % cup cake flour sifted, 1 teaspoon baking powder, pinch of salt. Fold in beaten egg whites. Bake in hot oven 425 degrees for 15 minutes. Ice with butter icing and roll from damp cloth. —Vi. Hantscharuk. Jelly Roll 4 eggs, 34 cup sugar, 34 cup cake flour, %4 tsp. salt, 1 tsp. vanilla, 34 tsp. baking powder. Add salt and baking powder to eggs in bowl and beat, add sugar gradually, beat until very, very light. Fold in sifted and measure flour, add vanilla. Bake in 17x11 pan lined with wax paper. —-R. Judd. Florida Cake Cream 4 tbsps. butter, gradually blend in 34 c. fine gran. sugar, add 1 egg yolk. Measure 2 cups sifted cake flour and sift three times with 2 tsps. baking powder and % tsp. salt. Sift in dry ingredients with 24 cup milk, beating well after each addition. Have 2 egg whites beaten stiff and gradually beat in 44 cup sugar, then fold into above mixture with 1 tsp. vanilla and grated rind of 1 orange. Bake in 2 layer pans in moderate oven.
