Fold egg yolk mixture into the whites. Pour
into a 114-quart casserole. Place casserole in
a shallow pan of hot water.

Bake in preheated 325° oven for about 55
minutes.

Serve warm or cold.

Yield: 4 to 6 servings.

234 Saucy Mocha Pudding

Preheat oven to 350°.
Combine in top of double boiler
14, cup cocoa
4 cup granulated sugar
4 cup lightly-packed brown sugar
3 tablespoons Pre-Sifted PURITY
All-Purpose Flour
Gradually stir in

2 cups hot coffee
Keep hot over simmering water.

CAKE BATTER:

Cream together
14 cup shortening
24 cup granulated sugar

Add

1 egg
14 teaspoon vanilla

Beat until light and fluffy.

Blend or sift together
1 cup Pre-Sifted PURITY
All-Purpose Flour
114 teaspoons baking powder-
14, teaspoon salt

Add to creamed mixture, alternately with
14 cup milk
Combine well.
Turn batter into a greased 8” square cake pan.

Pour hot coffee mixture over the batter. Do
not stir.

Bake in preheated 350° oven for 45 to 50
minutes.

Serve warm.

Yield: About 6 servings.

235 ~—- Jelly Roll
Preheat oven to 400°.

Grease a 15 x 10 x 1-inch jelly roll pan and
line with wax paper.

Whip until very thick and lemony
4 eggs
Beat in

1 teaspoon lemon juice
1 cup sugar

Meanwhile, scald together
14, cup milk
1 tablespoon butter

Blend or sift together
1 cup Pre-Sifted PURITY
All-Purpose Flour
1 teaspoon baking powder
14 teaspoon salt

Sift dry ingredients over egg mixture altern-
ately with hot milk, folding in gently after
each addition. Turn into prepared pan.

Bake in preheated 400° oven for 10 to 12
minutes. Turn out immediately on towel
sprinkled with icing sugar. Remove wax paper
and roll, rolling towel up in cake. Cool.
Unroll, fill with jam, jelly or filling and re-roll.

NOTE: Lemon Filling (recipe No. 114) or
Cream Filling (recipe No. 113) may be
used in this roll. Refrigerate until
serving time. For variety, fold

sliced strawberries into the cream
filling.

236 Chocolate Roll

Preheat oven to 375°.
Beat until stiff but not dry
4 egg whites
14 teaspoon salt
Gradually beat in
14 cup sugar
Set aside.
Beat until thick
4 egg yolks
Gradually beat in
14 cup sugar
Then slowly stir in
14 cup hot water
1 teaspoon vanilla
Carefully fold egg yolk mixture into the
beaten whites.
