APPLESAUCE CAKE | Mary Hopkins 11/4 c. flour ltsp. nutmeg 3/4 c. brown sugar 1/2 tsp. salt ltsp. cinnamon legg ltsp. baking powder 1/2 c. shortening le. applesauce ltsp. baking soda 1/2 tsp. allspice le. raisins Leave 1 tablespoonful of flour to coat raisins. Mix all dry ingredients together, Cream the shortening, gradually add brown sugar and cream until light and fluffy. Add the egg andbeat well. Add the dry ingredients, alternately with the applesauce a little at a time beating after each addition until smooth. Fold in the floured raisins, Bake in greased floured pan at 350 degrees for 40 to 50 minutes, BANANA CAKE Kathy Walsh 1/2 c. shortening ltsp. vanilla 1/2 tsp. salt lc, sugar l 3/4 c. flour 1/2 c. buttermilk or l egg 11/2 tsp. baking powder sour milk lc. mashed riped bananas’ 1/2 tsp, baking soda Preheat oven to 350 degrees. Cream the shortening and gradually blend in the sugar, Blend this until it is light and fluffy. Add egg, well beaten until well combined. Blend in bananas, and vanilla. In a separate bowl, blend together flour, baking powder, baking soda, and salt. Add dry ingredients to banana mixture, alternately with the buttermilk or sour milk. Pour mixture into a greased and floured loaf tin and bake at 350 degrees for | hour. BLACK FOREST CAKE Marilyn Thauberger Beat 2 egg whites till soft peaks form, Gradually add 1/2 cup sugar beating till stiff peaks form. Sift together 13/4 cups sifted cake flour, not all-purpose flour, 1 cup sugar, 3/4 teaspoonful soda and 1 teaspoonful salt into mixing bowl. Add 1/3 c. salad oil and 1/2 cup milk. Beat 1 minute at medium speed on electric mixer. Scrape bowl often. Add 1/2 cup milk, 2 egg yolks, and two 1 ounce squares unsweetened chocolate, melted and cooled. Beat 1 minute longer, scraping bowl often. Gently fold in beaten egg whites. Pour into two greased and lightly floured 9x1 1/2 inch round pans, Bake in moderate oven, 350 degrees, for 30 to 35 minutes. Cool on rack 10 minutes. Remove from pans. Cool thoroughly.
