Put a good tsp. of raspberry jam in each shell then add the following topping: 3 tsp butter, heaping 2 tsp almond flavoring Y cup sugar 5 or 6 tbsp rice flour Bake in 350 deg. oven until nicely browned. FRENCH DAINTY 2 cups flour pinch of salt 14 cup shortening sufficient water to moisten Roll out.Line shallow muffin tins with pastry and put 2 tbsp. filling in each. Filling for Above 2 eggs 1 cup currants 2 tbsp melted shortening 1 tsp vanilla 1 cup brown sugar | Beat eggs light, add sugar and melted shortening, currants and vanilla. Bake until set (about 1% hour). COCONUT JAM TARTS Pastry: Jam or Jelly: 4 tbsp butter Vy cup granulated sugar ] cup coconut 1 egg (beaten) 1% tsp salt 4 tsp baking powder Line tart tins with regular pastry; prick with fork; bake 10 minutes at 350 deg. F. While shells are baking, cream butter, gradually add sugar, cream well. Add salt and egg, blending well, stir in coconut and baking powder Put a small tsp. jam or jelly in each tart shell, cover with mixture, fill 24 full. Bake until light brown (about 15 minutes). LEMON BUTTER TARTS l% lb. butter 8 egg whites 2 Ibs. sugar juice and grated rinds of 4 lemons 12 egg yolks Put all together inv heavy pan and boil until sugar is melted and mixture all quite thick, keeping well stirred. Line tart tins with a good pastry and bake. When done place a spoonful of the filling in each tart shell. A meringue can be made from part of — the unused egg whites to top the tarts; place in oven until they have the desired golden tinge. Be sure not to brown. The lemon butter can be put into sterilized jars and kept as jam. eS
