COOK BOOK 15 Christmas Cake Ten eggs, 1 lb. each butter, sugar and flour, 2 tbsps. molasses, grated rind and juice of 1 lemon and 1 orange, 1 Ib. each sultanas and dates, % lb. candied peel, 1 tsp. each salt, cinnamon and soda, ™% tsp. each cloves, allspice and nutmeg, l lb. each seeded raisins, blanched almonds and currants, % Ib. candied cherries. Cream butter till very light, add sugar gradually, beating constantly. Beat eggs very light, add to butter and sugar, then add molasses and fruit juice. Mix and sift flour, soda and spices, add fruit and nuts and stir into first mixture. Line tins with 2-3 thicknesses of paper, pour in mixture and leave for 24 hrs. before cooking. Bake in slow oven about 3 hours or steam 3 hours and bake 1 hour. Mrs. Christenson. White Cake 1 cup sugar, % cup shortening, 4 egg whites, 1 tsp. al- mond, 2 cups cake flour, 3 tsps. baking powder, % tsp. salt, % cup sweet milk. Cream sugar and shortening. Sift flour, measure and sift with baking powder and salt. Add alternate- ly with milk to creamed mixture. Beat thoroughly, add almond. Carefully fold in stiffly beaten egg whites—R. Judd. Chocolate Cake lc. white sugar, 4c. butter, 1 egg, 1 c. cold water, 2 sqs. Baker’s chocolate, 1 tsp. soda, 1 tsp. baking powder, % tsp. salt, 1 tsp. vanilla, 1% c. flour. Cream sugar and butter, add egg and half of the cold’ water, then melted chocolate, then sifted dry ingredients and lastly the rest of the cold water. Bake in moderate oven, in nine inch pan. Date and Raisin Cake 1 c. each dates, raisins and boiling water in which 1 tsp. soda has been dissolved, cook and when cool, cream % c. butter, 1 cup sugar and 1 whole egg and yolks of two, then add boiled mixture, then 1% c. flour, 1 tsp vanilla, % tsp. each cinnamon and nutmeg. Romeo and Juliet Cake Light part: 1 c. white sugar, whites of 6 eggs well beaten, 1 tbsp. butter, 1% c. flour, 3 level thsps. b. powder, 4 tbsps. sweet milk. Dark part: 1c. sugar, 1 tbsp. butter, yolks 6 eggs, 1c. flour, 4 tbsps. sweet milk, 2 tsps. b. powder. Bake in separate tins. Spread a custard between them made of 2 eggs, | pt. milk, 4% c. sugar, 1 tbsp. flour or cornstarch. When cool flavor with vanilla. —Mrs. P. Crawford.
