ENGLISH PLUM PUDDING

1 cup raisins 4 eggs
1 cup currants 1 teaspoon salt

Y cup milk 1% teaspoons nutmeg

Y teaspoon soda 1 teaspoon cream of tartar
3 cups suet rolled with flour Flour to stiffen

Steam 2 or 2% hours. Serve with hard sauce. This is especially nice.

(DEM.) APPLE SNOW
3 apples grated 1 egg white
Y% cup sugar
Pour sugar over apples and white of 1 egg beaten until stiff and pure white.

Make a custard (cream pie filling), place in sherbet glasses, and put the apple snow
on top. ;

APPLE PUDDING

Ya cup sugar Ya cup milk
1 tablespoon butter 1 egg
1 teaspoon baking powder

Flour to make thickness of cake batter, pour over sliced apples, and bake.

DELICIOUS STEAM PUDDING

Y cup sugar 1 cup buttermilk
¥Y2 cup butter 1 teaspoon soda
1 egg 1 cup raisins

Add flour until as stiff as cake dough, then cup of stoned and chopped raisins.
If you wish, do not add so much butter and add some chopped walnuts.

Sauce
Rind and juice of 1 orange 1 cup butter
2 eggs 2 cups powdered sugar

Beat eggs very light. Place in pan of boiling water and cook until you cannot
taste egg.

CHRISTMAS PUDDING (Inexpensive)

Y% Ib. flour 3 eggs

Y% |b. bread crumbs Y2 teaspoon each nutmeg,
1 oz. paisley flour cinnamon and ginger
Ya Ib. chopped suet Pinch salt

Y Ib. raisins Just enough milk to make
Y Ib. currants it moist

6 ozs. candied peel 1 lemon, rind and juice
Y% Ib. sugar

Sift flour and spices together, then all the dry ingredients. Stir in the beaten
eggs and sufficient milk to make the mixture moist. Put in 1 large or two small

pudding basins or tins, well greased and boil for 4 hours. A wine glass of brandy can
be added if desired.
