BISQUE TORTONI Three-fourths cupful granulated sugar, 4 cupful water. Boil until spins thread from spoon. Yolks of 2 eggs, beat very light. Pour boiling sugar over yolks of eggs, stir up fluffy. Whip this till cold. Put in % pint of cream, whipped; then 2 whites of eggs, whipped. Put in a little sherry wine, then 10 macaroons, rolled. Freeze. Save a little macaroon to sprinkle over top when taken out of mold. BROWN SUGAR PUDDING 1 cupful brown sugar 14 cupful chopped nuts 1 cupful boiling water 1 teaspoonful vanilla 1 tablespoonful corn starch Mix sugar and corn starch, adding boiling water. Cook until thick. Let cool. Add nuts. Put in glasses and mold. Serve with whipped cream or custard. This is very nice, made with chopped dates instead of walnuts. BLACKBERRY PUDDING 14 cupful sugar 3 cupful of milk 14 tablespoonful butter 1 cupful flour 1 egg 1 scant teaspoonful baking powder Salt and flavoring Blend and bake. Add this fruit sauce generously: 1 full box blackberries, washed and mashed, 1 heaping tablespoonful butter creamed with % cupful sugar. BROWN BETTY 2 cupfuls sliced apples 1 teaspoonful cinnamon 1 cupful fresh breadcrumbs 3 tablespoonfuls butter 14 cupful brown sugar 14 cupful water Take out 2 tablespoonfuls bread crumbs. Mix apples, bread crumbs, brown sugar, cinnamon, add melted butter and place in a buttered baking dish. Pour water over whole mixture. Use re- mainder of crumbs and a little melted butter on top. Bake 45 minutes in a moderate oven. Serve with the following hard sauce: 4 tablespoonfuls butter, 1 cupful powdered sugar, ™% teaspoonful vanilla, 1 teaspoonful lemon extract, 1 teaspoonful boiling water. Cream butter, add boiling water and sugar gradually; stir until sauce is creamy, add vanilla and lemon, and set in the ice box to harden. —Mrs. William Merritt BANBERRY TARTS 1 cupful raisins, chopped fine 34 cupful sugar 1 large apple, chopped fine 1 egg Juice and grated rind of 1 lemon | Put all in stewpan and cook 15 minutes. Let cool, roll out circular pieces of rich pastry 4 inches in diameter, put 1 table- spoonful mixture on side and fold other side over, fasten edges together, make small incision in top and bake in quick oven. 162
