WEDDING CAKE 1 Ib. butter 1 1b. chopped almonds 1 Ib. brown sugar 2 Ibs. sultana raisins J2 egg yolks 14 lb. lemon peel 1 cup molasses 1% |b. orange peel 12 egg whites 1 Ib. candied cherries 4 cups pastry flour 1 Ib. candied pineapple 4 tsp. allspice 1% lbs. citron 4 tsp. cinnamon 1 cup fruit juice (orange and 1 tsp. nutmeg lemon) 2 cups preserved strawberries 1 tsp. soda 3. tsp. mace 4 tsp. salt. 2 Ibs. seeded raisins Let the shortening stand at room temperature until fairly soft. Meanwhile, beat egg whites fairly stiff but not dry. Beat egg yolks un- til lemon colored. Cream shortening and add sugar. Continue cream- ing until well blended. Add beaten egg yolks and molasses and beat well. Fold in egg whites. Add flour, mixed well with spice, reserving 1 cup cf flour to dredge fruit, with exception of citron. Add strawberries, almonds and fruit juice and mix well. Last add dissolved soda. Grease and line pans with brown paper. Bake in a slow oven 3 hours. Makes 15 lbs. Almond Paste % lb. ground almonds 1 by iene sugar Heat in oven until quite hot. Then mix to firm paste, with egg yolk. I use 2 yolks and 1 white, using the other white to put on cake be- fore putting on paste. MRS. A. LOCK. CHRISTMAS CAKE 1. Ih. butter: 'Y |b. blanched almonds 12 eggs 3. pineapple rings (cut fine) 1 Ib. brown sugar Y% lb. mixed fruit (no peel) '% lb. cherries 5 cups pastry flour 2 Ibs. raisins 1 cup brandy. 1 Ib. currants Cream butter. Beat in sugar. Add eggs one at a time. Flour the fruit and add. Add the rest of the flour. Add brandy. Bake 3 hours in a 300 deg. F. oven. MRS. D. TEMPLETON. WHITE FRUIT CAKE 3. cups sultana raisins 2 cups sliced almonds 2 cups citron peel 1/42 cups glaced cherries 2 cups pineapple glaced Grated rind and juice of 1 lemon and 1 orange. Prepare the above and let stand over night. 2: cups flour 2 cups butter 1% tsp. salt 2 cups sugar 1 tsp. baking powder 9 eggs. Cream butter and sugar. Add eggs, one at a time, beating well after each addition. Gradually add dry ingredients and then fruit which has been floured. | Put in large Christmas cake pan which has been lined with two thick- nesses of greased brown paper. Bake in 275 deg.
