28 THE BLUE BIRD CooK BOOK DATE CAKE 1 pkg. dates 1 cup flour Y Ib. shelled walnuts 1 teaspoon baking powder 1 cup sugar 1 teaspoon salt 3 eggs Flavoring Beat sugar and eggs together. Sift flour, baking powder and salt over nuts and dates and thoroughly mix, then add to sugar and eggs. Bake in a loaf pan at 350 degrees for 40 minutes. FRUIT CAKE 1 cup brown sugar Y2 teaspoon cloves 1 cup shortening, lard or Y2 teaspoon nutmeg butter mixed 1 teaspoon soda (dissolved in 1 cup water 2 tablespoons warm water) 1 cup raisins Y2 teaspoon baking powder 1 cup sultanas 1 cup nuts Y2 teaspoon salt 2 cups flour 1 teaspoon cinnamon Put shortening, water, sugar, spices, raisins and salt in pan and boil 5 minutes. When cold, add flour, baking powder, soda and nuts. Bake at 300 degrees. (DEM.) FRENCH ORANGE CREAM CAKE Make either a sponge cake or a plain cake, not too rich. Bake in two layers. When baked split layers in two and add the following cream: 1 pint milk 1 cup sugar 2 tablespoons cornstarch Y2 cup butter 2 eggs beaten until light 1 teaspoon yanilla Scald 2/3 pint of milk in a double boiler. Dissolve cornstarch in the remainder. When milk is hot add sugar, dissolved cornstarch and eggs and cook until thick. Remove from heat and add butter and vanilla. Peel orange, chop rind very finely; beat this into cream while hot and spread between layers of cake. If filling is too thick add orange juice. Let cake stand several hours before serving. FRUIT CAKE 1 ib. butter, unsalted 4 lb. almonds 2 cups granulated sugar cups flour 8 eggs 1 teaspoon soda Yq cup grape or loganberry 1 teaspoon each mace and juice cinnamon 2 tablespoons orange juice Y2 teaspoon each of nutmeg, 1 tablespoon grated orange ginger and cloves peel 1% Ibs. currants 2 ibs. seeded raisins Y% |b. walnuts Y Ib. peel Beat sugar and butter together, add beaten egg yolks, add soda and juices, also orange rind. Flour fruit well, and add to the rest with spices; add beaten egg whites last. Steam 3 hours and bake 2 hours, or just bake 4% hours at 300 degrees. BOILED RAISIN CAKE To 1% cups raisins, add Y2 cup raisin water, cooled 1 cup weter, and let simmer 1 teaspoon soda 3% cup white sugar 1 teaspoon cinnamon, cloves, Yq cup butter nutmeg 1 egg, beaten 1% cups flour Add raisins and soda. Bake in a slow oven. ICING: Icing sugar, 1 tablespoon butter, 1 teaspoon vanilla, and enough hot coffee to make a thick paste.
