62 FRIENDLY CIRCLE—1949 Cocktail Salad, Canned 1 doz. each peaches and pears, 2 med. sized cantaloupe, fresh pineapple or 1 can cubed pineapple. Cut all into little cubes, pack in hot sterilized sealers, add green and red cher- ries for color, add any other fresh fruit in season. Seal and process for 20 min. Can be used in various ways as with jelly, or added fruits such as apples, grapes, bananas, oranges. —Mrs. A. Peterson. Candied Cherries Stone cherries carefully, desired amount. Soak in vinegar 24 hours to make firm, drain. Take equal amounts sugar and fruit, mix thoroughly, then lay mixture on a big platter. Keep in cool place for 7 days, stirring well each day. Put in sterilized jars and keep in cool place. —Eulah Bruce, Ft. Wm. Heavenly Jam 4 oranges, 2 lemons, 1 doz pears, 1 doz. each peaches and apples, sugar. First put oranges and lemons through food chopper, using medium blade. Place in preserving kettle, boil gently while preparing other fruits, which are also peeled and put through chopper. Add these to first mixture, measure and add 34 as much sugar as fruit, boil until thick and clear, about 30 min. If boiled very rapidly this jam retains its lovely color. The rind of the oranges and lemons may be omitted if desired, using just the pulp and juice. —Mrs. Crawford. Apricot Conserve 30 apricots, 1 can pineapple, %4 lb. blanched almonds, 6 c. sugar. Heat pineapple juice, add sugar and when this boils add shredded or cubed pineapple and apricots. Cook until quite thick, add chopped nuts and cook 5 mins. longer. Colored cherries may be added. Pour in sterilized jars and seal, —Mary Keast, Roblin. Candied Cranberries 2c. large bright red cranberries, 2 c. sugar, 24 c. water. Cook the sugar and water together for 5 mins. Prick cran- berries with a needle and add to syrup, cover and cook very gently until the fruit is transparent. Allow berries to re- main in syrup over night, then drain. Roll in granulated sugar and dry very slowly in a cool oven, 250 to 275 degrees.
