COOK BOOK NI Maple Walnut Biscuits 2 cups prepared tea bisc mix, %4 cup brown sugar lightly packed, %4 cup chopped walnuts, %4 teaspoon vanilla, %4 tea- spoon maple extract, % cup milk (approximately), 2 table- spoons softened butter, 4% cup brown sugar, maple syrup, walnuts. Method: Prepare muffin pans by greasing well with butter. Put 1 or 2 tablespoons of maple syrup (depending on size of muffin pan) in the bottom of each. Adda few broken walnut meats. Add % cup brown sugar and chopped walnuts to the prepared tea biscuit mix. Add vanilla and maple ex- extract to the milk and using a fork mix to a soft dough. Pat dough out into a rectangle on floured board, spread with softened butter and sprinkle with % cup brown sugar. Roll up like a jelly roll and cut in 1 inch slices. Place cut side down on maple syrup in pans and bake ina hot oven 450 degrees Turn out immediately and serve warm or cold. Yields 10 to 12 medium sized biscuits or 1% dozen small biscuits. —Ruth Chambers. Carenuel. Raiciz. Rolls 2 cups prepared tea biscuit mix, %4 cup brown sugar | lightly packed, % teaspoon vanilla added to % cup milk (ap- proximately) 24 cup washed raisins, % cup brown sugar, 2 tablespoons butter, 1 teaspoon cinnamon. Method: Prepare muffin pans as follows: Grease well with butter and put 1 or 2 tablespoons of the following mixture in the bottom of each muffin pan: 2 tablespoons butter, 1 tablespoon caramel syrup, '% cup brown sugar, % cup corn syrup, pinch of salt, 1 tea- spoon vinegar. Measure biscuit mix into a bowl and break up lumps with a fork. Add % cup brown sugar and milk to make a soft dough. Turn out on floured board and lightly roll into a long rectangle. Spread with butter. Sprinkle with raisins, sugar and cinnamon and roll up like a jelly roll. Cut in 1 inch slices and place cut side down in prepared muffin pans. Bake in a preheated oven of 450 degrees for 10 to 12 minutes. Turn out immediately and top with glazed cherries, nuts or ad- ditional raisins. Cool slightly, but serve warm. —R. Chambers. Doughnuts 1 cup sugar, 1 bastingspoon melted lard, 1 teaspoon cream of tartar, 3 heaping teaspoons baking powder, 1 cup milk or perhaps a little more, 4 eggs, dash of salt, 1 cup mashed potatoes (put through ricer).
