168 British Columbia Women’s Institutes DATE FILLED COOKIES 4 cup shortening 2 cups flour Y4 cup brown sugar Y% tsp soda 14 cup sugar Y tsp salt 2 eggs Cream shortening and sugar, add eggs and beat well. Sift dry ingredients and add; chill while making filling. 1 cup dates, 4 cup sugar, 1% cup water, 1 cup walnuts; combine all but nuts. Cook over low heat until thickened (5 minutes); add nuts (chopped) and cool roll dough 1” thick. Cut half with round cookie cutter, half with doughnut cutter. Place a tsp. of filling on cookie rounds. ‘Top with doughnut shaped cookies. Press edges together with fork. Bake at 400° for 10 minutes. DATE COOKIES 114 cups brown sugar 1 cup sour cream 14% cups chopped dates 3 eggs 114 cups walnuts 2 cups flour 1 tsp soda 1 tsp vanilla Drop from spoon on greased baking tin in moderate oven. ALMOND COOKIES 1 cup butter 1 cup sugar 1 egg 2 cups flour 1 small tsp soda Y% cup ground almonds 1 tsp cream of tartar mm Mix in order given. Knead well. Put on ungreased pan and flatten with fork or glass. Place a half an almond on each. Bake in moderate oven. (These cookies should be stored a few days.) DAD’S COOKIES 1 scant cup butter Y tsp salt 114 cup sugar 3 scant tsp baking soda 2 eggs, well beaten 4 tsp ginger 6 tbsp syrup 4 tsp cinnamon 2 cups ground oatmeal Y% tsp allspice 2 cups flour Drop in pans 24” apart and bake in a slow oven. MELTING MOMENTS COOKIES 1 cup melted butter or part shortening 34 cup brown sugar 1 egg Y% tsp cream of tartar 134 cup sifted all-purpose flour Y tsp baking soda 1 tsp vanilla Y% tsp salt Combine shortening, butter and sugar. Add egg and vanilla. Beat well. Add sifted dry ingredients. Chill. Drop from tsp. on well greased cookie sheet about 1/4” apart. Place a cherry on top. Bake at 350° for about 10 minutes. |
