Coffee Cake

1} cup flour

] cup sugar

1 t. baking powder
Y2 t. cinnamon

pinch of salt
Y2 cup milk
1 egg

Y4 cup melted butter
Mix ingredients. Put in pan and sprinkle with sugar. Bake 20 minutes at 350
deg. F.

Vinarterta (Icelandic Cake)

1 cup butter
1Ys cups white sugar

3 eggs

Yo t. salt
3 t. baking powder
vanilla
Enough flour to make a stiff dough.

Roll dough out to ‘4°’ thickness. Cut out circles with pie plate and bake these
circles on a cookie sheet. Fill between the circles with the following prune filling.
Night before: Soak prunes overnight and cook till stones loosen, then remove the
stones. (If you have pitted prunes just cool them). Add desired amount of sugar and
almond extrac? to taste. Cake may be iced if desired.

Dream Cake
1% cups flour
Y2 cup brown sugar
Y2 cup butter or margarine
Mix like crumbs and put into pan, bake about 10 mins. Remove from oven.
Mix:
3 eggs
12 cups brown sugar
4 t. flour
Y2 t. baking powder
1 t. vanilla
1 cup fine unsweetened coconut
34, cup chopped walnuts
34 cup raspberry jam
Mix together spread on top of cake and bake about 20 mins. 350 deg. F.
