COFFEE CAKE Y cup butter (or oil) 114 cups white sugar 3 eggs Mix above well and add, alternately: 3 cups flour 142 cups sour cream 14% tsp. baking powder Beat well. Grease tube tin and add half of cake mixture. Sprinkle with half of following mixture: 1 tsp. cinnamon YZ cup brown sugar V2 tsp. cocoa Put rest of batter in tin and sprinkle with rest of sugar, cocoa- cinnamon mixture. Bake at 350 degrees for 50 to 60 minutes. Evelyn Gulstene LEMON LOAF 6 tbsp. shortening Y2 cup milk | cup granulated sugar 1¥2 cups flour 2 well-beaten eggs Y% tsp. salt grated rind of one lemon 1¥2 tsp baking powder Sift together flour, baking powder and salt. Cream shortening and sugar together. Add well-beaten eggs. Add milk, sifted dry ingredients and grated lemon rind. Bake in loaf pan in moderate oven (350 degrees) for one hour. Remove from oven and cover with ¥8 cup sugar mixed with juice of one lemon. Delicious sliced, buttered and served with coffee. Nan Smallwood APPLESAUCE LOAF 2 cups flour 2 tsp. cinnamon Y4 cups sugar 1 cup walnuts 3 tsp. baking powder ] egg 1 tsp. salt 2 tbsp. melted shortening YW tsp. soda 1 cup applesauce Sift dry ingrdients. Add walnuts. Beat egg, add applesauce and melted shortening. Add dry ingredients. Bake in loaf pan in moderate oven one hour. Pete Wallace NO
