ANGEL PIE 4 egg whites 4 tsp. cream of tartar 1 tsp. vinegar % tsp. vanilla 1 c, sugar Beat whites to a peak, fold in sugar, add vinegar and vanilla by degrees. Put in pastry shell and bake in very slow oven 200°F. Make nest in centre and fill with lemon filling: 4 egg yolks, % cup sugar, juice and little rind of 1 lemon, 3 tbsp. boiling water. OLD COUNTRY STYLE BAKEWELL TART Pastry for 8 or 9 in. pie crust 1 egg Strawberry jam to cover 2 tbsp. bread crumbs 2 tbsp. butter 3-5 drops almond essence 2 tbsp. white sugar Line a pie plate with pastry and spread with jam. Cream butter with sugar and add beaten egg. Mix in bread crumbs and flavoring. Pour mixture over jam in pastry and bake in hot oven for 20 minutes. Makes about 4 servings.— Courtesy Mrs. V. G. Brown. ANGEL BERRY PIE 6 egg whites 1 tsp. vanilla 14 tsp. salt 1 cc. sugar 1 ce. white sugar 1 tbsp. vinegar Beat till stiff the whites and salt. Add sugar gradually, vanilla, still beating. The other cup of sugar and vinegar still beating. Put mixture in pie plate piled high in middle. Bake 1 hour and 30 minutes at 300°F. Cool. Top will settle. Slice like pie. MACAROON PIE 20 dates chopped 3 egg whites, stiff 1% ¢. pecans chopped 1% tsp. baking powder 1 ec sugar 1 tsp. almond extract 12 saltines, rolled fine Whipped cream Mix dates, pecans, and sugar well. Add saltines and beaten whites. Add baking powder and almond extract. Fold this into above dry mixture. Put into greased pie tin and bake 30 minutes at 350°F. SUGAR NUT PIE 1 uncooked pastry shell or 1 tbsp. flour small tarts 1 c.raisins % ec. butter 1 c.chopped nuts 1 ce. granulated sugar Whipped cream. 2 beaten eggs Cream butter, add sugar, add eggs, flour, raisins, nuts.
