CUCUMBER PICKLES Nine green cucumbers, four onions, cut in cubes and let stand for three hours in brine, drain and add the following dressing: Half cup flour, half cup sugar, two tablespoons mustard, one tablespoon celery seed, shake of pepper. . . CUCUMBER SAUCE Four qts. cucumbers, peel, slice and let stand in brine overnight; four qts. onions, sliced, half an oz. celery seed, half an oz. whole peppers, one tablespoon tumeric, two tablespoons mustard, five lbs. brown Sugar, three qts. vinegar. Boil fifteen minutes, use a little thickening in sauce. A Friend. CHILLI SAUCE Four qts ripe tomatoes, two head celery, two large onions, one table- Spoon salt, two teaspoons cinnamon, half teaspoon cloves, two teaspoons all- Spice, half a teaspoon black pepper, quarter teaspoon red pepper, two cups brown sugar, half cup vinegar. Chop all up fine, add spices and vinegar and boil for two hours and: seal while hot. Mrs. A. Baldwin. CHILLI SAUCE Peel twelve large tomatoes, four large onions and chop fine, one table- spoon of salt, half a cup of sugar, two cups of vinegar, two tablespoons mixed spices and a bunch of celery, chopped fine added improves it. CRAB APPLE JELLY Seven lbs. crab apples, wash them (do not peel or core) cut up roughly and remove stems and tops. Put apples in preserving pan with a little more than sufficient water to float them and boil steadily for one hour. They. should stir quite easily but if they get too stodgy add a little more water. Let drip through jelly bag all night. In the morning add one lb. white sugar te each. pint of juice and a little essence of lemon. APPLE GINGER Boil into a syrup two lbs. white sugar, one and a half pints water and one oz. tincture of ginger. Pare, core and cut two lbs. of hard apples and boil them in the syrup. Put the apples into jars, pouring over them the syrup. Cover the jars well to keep out the air. Mires Ces SA ttre VELVET KISSES One cup molasses, three cups white sugar, one cup boiling water, half cup butter (melted), three tablespoons vinegar, half teaspoon cream tartar, one quarter teaspoon soda, vanilla. Put molasses, sugar, water and vinegar in granite kettle, when boiling add cream tartar, boil until mixture becomes brittle in cold water, stir constantly during the last part of the cooking, when nearly done add soda and melted butter, cook until brittle, cool and pull.
