CORNED BEEF IN PASTRY CASES Chill a can of corned beef in the refrigerator overnight so that the meat will slice easily. Cut in 6 slices and spread each slice with a little prepared mustard. Wrap each slice in a square of pastry—leaving slits in the top for the steam to escape. Bake in a 450° F. oven for 10 minutes, then reduce the temperature to 350° for 17 minutes longer. Serve hot with tomato sauce. VEGETABLES CORN SCALLOP Y5 green pepper chopped (optional) Few grains pepper and cayenne tablespoons chopped onion 1 cup milk 2 tablespoons each butter and 'Y cup dry bread crumbs flour 1 tablespoon butter 1 teaspoon salt 1 egg 14 teaspoon each paprika and 2 cupscorn mustard VY cup buttered crumbs Cook pepper and onion in fat for 5 minutes. Add flour and seasonings and stir until blended. Add milk gradually and bring to boiling point. Brown dried crumbs in butter and add with corn and egg. Turn into a greased casserole. Top with crumbs. Bake in a 400° F. oven for 30 minutes. Serves 6. CANDIED SWEET POTATOES Peel boiled sweet potatoes, cut in halves and arrange in a greased casserole. Add 2 tablespoons water. Sprinkle lightly with salt and generously with brown sugar. Pour a little melted butter over all. Bake in a 325° F. to 350° F. oven about 1 hour. CREAMED CARROTS Wash and scrape 1 pound carrots, slice and place in pressure cooker without trivet. Add % cup skim milk. Combine 1% tablespoons butter; 2 tablespoons flour and 1% teaspoon salt. Put this mixture on top of carrots in cooker—do not mix in. Adjust lid. Cook vegetable for four minutes after pressure registers 15 pounds. Reduce pressure to zero by holding cooker under cold water tap. (Do not let water run over gauge). Remove gauge and cover. Return vegetable to range and stir slowly for a minute or two to thicken sauce. CABBAGE SALAD DE LUXE V4 small head cabbage—shredded 1 banana, diced (scant) about 50 seedless green grapes 5 green pepper, diced (halved) 1 apple, diced Add a few grains salt to ingredients and toss lightly together with a little mayonnaise.
