OLD-TIME RAISIN DROPS 3/4 cup butter or margarine 11/2 cups brown sugar 3 eggs 2 tablespoons molasses 1 teaspoon soda 21/2 cups sifted all-purpose flour 1 cup raisins 1 cup chopped walnuts Cream butter or margarine with sugar until light and fluffy. Add eggs and beat well. Add molasses mixed with the soda. Add dry ingredients, raisins and nuts. Drop by spoonfuls onto greased baking sheets. Bake in moderate oven, 350 deg. F., for 12 to 15 minutes. Makes about 3 dozen cookies. NOTE: No baking powder is used. PORRIDGE COOKIES 1 cup hot cooked rolled oats 2 tablespoons shortening 1/2 teaspoon salt 1 cup sugar 1/2 cup molasses 1/2 cup raisins 1/2 cup chopped walnuts 1/2 teaspoon cinnamon 1/2 teaspoon soda 2 cups (more or less) pastry flour Mix ingredients in the order listed. Drop 2 inches apart on well-greased cookie sheet. Bake in moderate oven, 350 deg. F., for about 10 minutes. APPLE HERMITS 11/2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon soda 1/2 teaspoon salt 1 teaspoon cinnamon 1/4 teaspoon nutmeg 3/4 cup shortening, at room temperature 1 cup brown sugar J egg 1 tablespoon water 11/2 cups rolled oats 1 cup raw diced apple 1/2 cup raisins Sift dry ingredients together. Cream shortening. Add sugar and mix thoroughly. Add egg and beat well. Add water. Stir in rest of ingredients. Drop from teaspoon onto buttered cookie sheets. (Roll cookie balls into sugar-cinnamon mixture, if desired.) Bake in moderate oven, 375 deg. F., for 12 to 15 minutes, or until done. Add eggs and beat well. Stir in sifted dry ingredients, rolied oats and cornflakes. Push from teaspoon onto ungreased baking sheet, about 1 inch apart. Bake in moderate oven, 350 deg. PEANUT SMAX 1/2 cup shortening 1/2 cup butter or margarine 1 cup white sugar 1 cup brown sugar 2 eggs, beaten 1/2 tablespoon water teaspoon vanilla cups all-purpose flour teaspoon baking powder teaspoon baking soda cup oatmeal cup cornflakes pound peanuts, rolled fine Cream shortening and sugars, add beaten eggs, water and flavoring. Sift flour, baking powder, soda and add with oatmeal and cornflakes. Add peanuts. Drop on greased cookie sheet from ateaspoon, Bake in a 375 deg. F. Makes 2 1/2 dozen cookies. EGGLESS COOKIES 1/2 cup margarine 1/4 cup brown sugar 1/4 cup sugar 1/4 teaspoon baking soda 1/4 cup raisins Grated rind of 1/2 orange 1/4 cup nuts 1/4 cup chocolate bits 1/4 teaspoon salt 1 cup rolled oats 1/4 cup orange juice 1 cup plus 2 tablespoons pastry flour Cream margarine and sugar. Mix flour, oats and salt. Add soda. Add alternately with orange juice. Add raisins, nuts and chocolate bits. Drop from teaspoon onto greased baking sheet. Flatten with potato masher or fork tines. Bake in 350 deg. F. oven, for 10 to 12 minutes.
