154 THE BLUE BIRD CooK BOOK CALGARY MAID SANDWICHES These are made in 3 layers; one may use brown bread for the centre if desired. In the first layer you put a mixture of 2/3 crushed walnuts and 1/3 chopped pimentos moistened with salad dressing. The second layer is thinly sliced bananas with salad dressing, and must be prepared just before serving. The first layer can be prepared beforehand. ROLLED CHEESE SANDWICHES Melt 2 tablespoons butter, add 2 heaping teaspoons flour, salt and paprika to taste, add 1 cup milk slowly, when smooth add 34 cake cream pimento cheese. When cold spread on thin slices of bread, trim off edges and roll. Pack close together in shallow pan and when wanted toast under the broiler. Turn with spatula and toast other side. These may be made in the morning of the day they are to be used, covered with a damp cloth to keep the edges from curling. ROLL SANDWICHES Remove the crust from a sandwich loaf and cut thin slices from the entire length of the loaf. Spread with creamed butter, then with the chosen filling. Chop sweet pickles with meat, egg yolk and parsley, or chicken paste with mayonnaise. Roll very carefully, press firmly to keep in shape, wrap tightly in waxed paper and a damp cloth. They can be made the day before without losing any of their freshness. Slice roll thin with sharp knife. HOT SANDWICH Goldenrod Eggs with Peas Hardboil 3 eggs, chop whites coarsely and mix with 1 cup or more of well seasoned cream sauce, adding Y2 cup hot cooked peas. Pour on hot buttered toast and rice egg yolks over top. Serve at once. (DEM.) 57 SPECIAL SANDWICH Y2 jar mayonnaise 1 jar sweet mustard pickles, 2. tablespoons sweet pickles, chopped chopped 1 teaspoon Worcestershire sauce 2 tablespoons stuffed olives, 3 tablespoons chopped ham or any chopped leftover meat 2 tablespoons dill pickles, Y4 teaspoon salt chopped Yq teaspoon sugar 3 tablespoons chow-chow Few grains pepper pickles, chopped Mix ingredients thoroughly and spread between slices of buttered bread. Cut in halves or fancy shapes. CHEESE FROSTED SANDWICHES Chop together 1 cup roast or boiled chicken, 3 olives, 1 pickle, Y2 cup blanched almonds or walnuts. Moisten with salad dressing. Cut bread thin and butter, then put together with the above mixture, putting three slices together. Take one cream cheese, moisten with sweet cream, add salt and pepper. Mix until smooth, then spread on top and sides of sandwiches. Decorate with thin strips of different colored gum drops. Cut about two inches square. ~~ WHITBURNS’ LTD.
