Cut spare ribs into serving pieces. Brown them in baking pan over surface heat. Combine the remaining ingredients and pour over ribs. Cover. Bake in a moderate oven of 350 degrees for 1-3/4 hours. Spoon Sauce over ribs 2 or 3 during baking. Bake, for 15 minutes, uncovered. Amy Anderson SWEET AND SOUR SPARERIBS 1 c. brown sugar 3/4 c. vinegar 3 tbsp. white sugar 2 or 3 tbsp. catsup 1 c. water 1 tbsp. cornstarch Let sauce simmer and thicken slightly while spare ribs are cooking. After coating spare ribs in flour, dip in beaten egg and deep fry for 20 to 30 minutes, then put into sauce for 15 minutes. (I find that if I leave the ribs in the sauce any longer they absorb too much liquid and tend to be soft whereas I prefer a light coating of sauce while the ribs still retain their crispness). Put in: Chopped parsley Chopped shallot or Herbs to your liking onion Salt & pepper Stir over heat a few minutes. Add 1 pt. stock or water. When boiling, lay in it sliced salmon. Simmer very gently until tender. Strain off liquid into other pan. Thicken with flour and curry to taste. Flavor with lemon juice. Bring to boil. Stir. Pour over salmon and serve. Mrs. M.
