Mrs. Ruth Buck CHINESE WEDDING CAKE Makes 2-9 inch layers Sift together: 1 cup sifted flour 1 teaspoon baking powder Separate 6 eggs. Place egg whites in large bowl. Beat until foamy. Gradually add 1 cup sugar while beating. Beat until stiff. Add egg yolks one at a time, beating well after each addition. Carefully fold in dry ingredients, a few tablespoons at a time. Turn into two 9'! layer pans. Bake at 350 degrees for 20 to 25 minutes. Cool. Spread one layer with whipped cream frosting using: 2/3 cup cream 1 can crushed pineapple (drained) Top with remaining layer. Spread whipped cream over cake. Refrigerate.
